Is it ok to eat it boiled together with the chicken? Anyone knows its nutritional value besides fat?

Yes it's fine to eat. Low fat diet advocates will say it contains too much fat.. But, there is more and more research indicating that low fat isn't the best for you. In a diet low in refined carbohydrate there is no reason to eliminate poultry skin as a source of dietary fat. The science indicates... its not fat that makes us fat, and its not dietary cholesterol that causes heart disease.

Nutritional info: 34 grams of boiled/stewed chicken skin only is 160 calories, 15grams of fat total (only 4 grams saturated,0 grams Transfat ), 28 Mg Cholesterol, 25 mg Sodium and a whopping 7 grams of protein.

Hope this helps. :-)

Jut pat off the extra oil after cooking, the chicken is moist after you cook with the skin, not so dry. Marlene of Fl.

the majority of the fat in poultry is found under the skin but by boiling the chicken the majority of the fat would be released and end up in the boiled water. not much measurable nutrients in the skin of poultry, not enough to even worry about.

Boneless skinless chicken breasts are better for you, I don't think that the skin really has any nutritional value besides fat.
