A good hotel mid-range in term of price but excellent quality, service, nice rooms, pool and fitness club on top floor, is the Metropark Kowloon on Victoria road near Kowloon Tong. Expect about 700HK$ for a double room.
For food, try anything you can find from street stalls. For places to see, there is no shortage and no point for me to repeat what you can find on line. The best site for travel information is below. If you have additional questions more specific to your itinerary, don't hesitate to ask.
