If so, which plague found in chapters 7-12 of Exodus is meant to discredit which deity?

I wouldn't be surprised -- the symbols of early Genesis (the serpent, the apple, the female as cause of humanity's downfall) were deliberately selected to smear another local cult that worshipped a mother goddess...

That is not found in the Bible, but the notion is an interesting thought.

The Bible says that the plagues were for these reasons:

1. To fulfull God's will to bring the Israelites out from under the burden of the Egyptians, and that God will be the Deliverer. God will redeem them with great judgements [Ex. 6:6]
2. To show the Israelites the He is God. [Ex. 6:7]
3. To bring the Israelites to the Promised land. [Ex. 6:8]
4. The Pharaoh will know that God is Lord. [Ex. 7:17]
5. To allow the Israelite's to tell their grandchildren how God made a mockery of the Egyptians and how He performed the Signs. [Ex. 10:2]
6. To make a distinction between Egypt and Israel. [Ex. 11:7]
7. To show God's power. [Ex 13:16]
8. To let the Egyptians grant favor and let the Israelites go, and not go empty-handed. [Ex. 3:21]
9. To allow the Israelites to serve Him. [Ex. 9:13]
10. To proclaim God's name through all the earth. [Ex. 9:16]

And God did what He said He would do. I'm sure God's power did make a mockery of both the people and their false gods.

I've never heard that, but it's an interesting interpretation.

I saw something that said the plagues were at least plausible in light of the eruption of the volcano/island of Thera.

Yes. God did descredit the Egyptian "gods".they worshiped the Nile, insects,frogs,nature...all became disgusting to them after the plagues.
