I learn both French and Japanese and I would say French or German would be a great language to learn, as both have similar grammar and sort of sounds the same (in some respects) as English. Languages such as Chinese and Japanese from experience are harder to learn as you have to remember the strokes for each 'letter', whereas the others are at least in 'English'.
As for most in demand, it depends where you live. French would be popular for translators as it is also the language in countries such as New Calidonia and Canada - Quebec.
Find a good course and stick to it and I'm sure you'd be fine.
