No polite way, if the person is in authority over you you must stay polite. Wait until you get a break in the conversation then say I need to get back to work if you should be working. Often you can just say it has been nice talking to you or I will keep that in mind and act like you thought they were done.
The best method it to try to find the conversation interesting if they are older or your boss you might learn something.
Ask questions about something else, lead the conversation.

Tell them you forgot something, or basically try to make the conversation go your way, what I mean is talk over him. Whenever people see that the conversation is not going their way they always try to get out of it. So, just take control of the conversation, talk about something your passionate about and they'll lose interest really quickly.
