Grill or bake chicken, bake a potato and heat veggies, is the simplest.

Spray or Grease a oven dish, ( Pyrex bowl with lid )

day 1,

Place the Chicken Breast in the middle of the bowl or pan
lay the pcs. of bacon across making a basket weave

cut up two ( white or sweet ) potatoes in to 4 pcs. place around the chicken breast ( White work best here)

pour the can of tomatoes with water and all, over the above,
add salt and pepper, and a little garlic and sweet Basil if you have them all, if not you know what to get when you can.

350 degrees for 1 hour with a cover or lid on it

Sweet potatoes into a second dish for the oven, cut with a knife a small wedge into the long side of the potatoes. add butter now or later, it's your choice. I prefer cream cheese and chives.

day 2 Mix veggies would be fun with another dish if you have left overs. Make up a pie crust, add chicken veggies and top with sauce from the oven dish, bake @ 225 for 40 Min's. and you have poor mans pot pies.

I hope you enjoy it!

You might need cornstarch to make some sauces, but you can also boil the potatoes, mash a small amount and use that for thickener, OR use the water from the boiled potatoes. It will be full of potato starch.

My suggestion for a meal would be to fry up a small portion of bacon, using some of the grease as a seasoning and as the cooking oil for a piece of fried (uncoated) chicken. then crumble some bacon for adding to mashed potatoes, or mashed sweet potatos. Then steam some veggies. There is a balanced flavorful meal.

IF you have some eggs, make a breakfast skillet meal of bacon, home fries, and eggs. Serve with toast.

ok try this one out....

put the chicken breat in a baking dish..
put the tomatoes in a bowl and mix with half the can of water....
dice a large potato into about nich size squares...add to tomato mix ...
do the same with some sweet potato...
them pour over chicken..
bake for 30 minutes at 180 C....
while that cooking fry the bacon until really crispy and crumble it up...
after chicken has been in the oven for 15 minutes stir and add 1/2 cup frozen veggies...
when 30 minutes is up serve in deep bowls with the bacon crumbled on top...
this recipe can be frozen if you have to much this usually serves three people...
but i also sometimes add pasta as well ...
but you can put anything into this and it will taste pretty good....
enjoy...

Take your bacon, fry it crisp, set bacon aside.
Take the potatoes, sweet and regular and bake in oven, until done.
Take the Chic Breast, cut into cubes, and saute' in bacon grease until almost cooked, remove chicken from bacon grease and roll in corn flower and set aside.

Take the can of tomatoes and refrigerate until very cold, Maybe put tomatoes in fridge before you start other stuff.

Put mixed veggies in bacon grease and saute' until almost done, add the breaded chicken to the veggies stir together until done.
Use the bacon to flavor your baked potatoes, use them as a side to your stir fry and use Ice cold tomatoes for dessert.

You will have enough to serve 2 to 4 people depending on how many potatoes you have, how many frozen veggies,

Hopefully You have salt, pepper at least, be nice but not absolutely necessary

Quite a challenge but I have eaten worse,

Edit:Changed my mind, the tomatoes should be served with the meal as an alternate from hot to cold, and clear your palate delicacy.....N~joy

wrap the chicken breast in the bacon. use tooth pics to hold it together. bake at 400 for 30 minutes. after that is in the oven, peel the potatoes and cut the and boil them. When they are soft, drain the water, add a little milk and butter and mash them. While they are boiling, start the mixed veggies. boil them also. they won't take as long, so save them for last. If you time it right, they should all come out within about 5 minutes of each other. good luck.

Pound the chicken breast so it is even, wrap in bacon and bake uncovered until done. If sweet potato whole just wrap in foil and in oven with chicken. Steam the mixed veggies with a small amount of seasoning and butter. Sounds like a great dinner.

Have you got any herbs and spices?

Roast potatoes with grilled (or roast) chicken breast and a chunky tomato based sauce/salsa poured over the chicken. (I recommend using parsley or basil in this salsa... and if you have any capsicum, add that too.) You could always boil up some of those veggies and serve on the side.

I would personally ditch the tomatoes... grill off the chicken breast.

Take the potatoes, veggies and bacon... make them into a hash and serve them with the chicken.
