Does anyone have some quick breakfast ideas for one? I can't do lactose in the morning and am sick of toasted bagels - plus, would like to cut back on the carbs.

Thanks!

Boiled eggs, you can boil several and keep in frig. Just grab one and a piece of quick toast, coffee or juice or milk and off you go!
Bran or grain muffin. You can make a batch & keep a few days worth.
Quick eggs cheese omelet
1/2 a pink grapefruit
Oatmeal instant is fast with a variety of flavors
Hot or clod cereal. try those maple pacan flakes, OUT OF THIS WORLD!!
Toaster waffles in freezer section, there are endless quick toaster and microwave breakfasts in the freezer section. Cheap to!
Sausage egg scrambles for the toaster,
P B & J uncrustables
Microwave egg muffins with meat and cheese, really good!
A whole breakfast platter for the microwave with the works eggs, pancakes, hash browns, meat. These things all cost less than or around $2. McDonalds even has that $1 menu at the window, hash brownes or muffin & juice, cheap, hot, fast & tasty at the window.

I feel for you. I'm lactose intolerant with IBS, so I have to watch what I eat in the morning as well.
Here's some of the things I have on different days.

Scrambled Eggs w/ Wheat Toast.
Fresh Fruit Salad.
Toasted Cinnamon Raisin Bread.
Pop-Tarts (You can toast them or just eat them regular).
Granola Bars.
Banana/Blueberry/Strawberry Muffin.
Frozen Waffles.
English Muffin w/ Jelly & Butter.
Cinnamon Roll.

When you have extra time make your own breakfast calazones
or breakfast sandwiches, freeze then put in micro. when needed.
Muffins are something you make ahead and use throughout the week. I love fruit so make a fruit bowl for the morning individual containers cut back on the break down so it should last u ad a tad acid like lemon or orange juice.
Grits I love them with cheese maybe buy the vegetarian cheese. Soy milk. If your satying away from carbs make yourslef scramble bowls leaving out biscuit, maybe add a hasbrown to bottom. Make a casserole and divide up for the week. Layer pan with hasbrown patties or the shredded for easy break up i use patties like MCDs anywayl ayer some protein and veggies Ijusdge by what i like in my omlette
pour a milk and egg(using you converted milk) mix over all and layer with cheese if wanted(your converted) cook about 45 to an hour on 350 til knife comes out clean
good luck
@@@@ Hunny find yourself someone to share your breakfast with even if its a dog, we get more creative think when we are doing it for someone else. Easier said then done though isnt it. Some mornings I would really like to throw the breakfast at my mate, lol.So I think your lucky you only have to wash one coffee mug.

Ingredients (for one):

2 strips turkey bacon - torn into rough pieces.
2 eggs.
1/2 red pepper - finely chopped.
1/2 onion - finely chopped.
4 or 5 small mushrooms - chopped.
1 tablespoon salsa.
A little grated reduced fat cheese (skip this if you're lactose intolerant).

Directions:

Use a no-cholesterol olive oil cooking spray in two frying pans.
In one pan start the turkey bacon cooking for two minutes, then add the peppers, onions, and mushrooms. After four or five minutes stir in the salsa. Keep the heat low to prevent burning.
In the second pan, fry the eggs (however you like them). Put the eggs on a plate and sprinkle the cheese over them. Then add the bacon/veggie/salsa mix on top.

Eat, and enjoy. I have this around three times a week, it's tasty and gives you a good start to the day.

A nice omelet with cheese and whatever else you want is always nice with some wheat or rye toast. Fresh melons are still good this time of year. Or you can grab granola bars or things like that.
