Honestly myself would have grabbed what I had for box mixes and used pumpkin instead of oil for like muffins or quick breads or even cake use some oil too. Depending on measurements i know it works with muffins and bread, I love pumpkin but no one else likes it as much. Pumpkin is only a pie to them lol. I fold mine into coolwhip with some tasting for sugar and spices and just dunk things into it, like pound cake, berries, bananas, chocolate, ginger snaps, nilla waffers and my favorite those sugar wafers mmm. Also just take premade pastry like pie or such i make twists with cinn. and sugar and use the sticks to dunk.or take something round like cleaned tuna can biscuit cutter, make rounds out of pie shell and poke bake on cookie sheet layer the coolwhip mixture over to make like sandwiches. Sometimes I layer more than one together for presentation, but I usually just make that for myself Enjoy.
PUMPKIN BREAD PUDDING
1 c. sugar
2 tbsp. butter, melted
1 1/2 c. milk
3/4 c. raisins
6 slices bread, crumbled
1/2 tsp. vanilla
3 eggs
1 3/4 c. mashed, cooked or canned pumpkin
1 1/4 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/8 tsp. nutmeg
1 can evaporated milk
1/2 c. chopped nuts (optional)
Whipped topping (optional)
Stir together sugar and butter. Add milk, bread and vanilla. Beat in eggs. Stir in pumpkin, raisins and spices. Gradually stir in evaporated milk until well blended. Pour into greased 8x12x2 inch pan. Sprinkle with pecans. Place in pan on oven rack, fill pan with hot water and bake in 350 degree oven for 50 minutes.
Increase temperature to 425 degrees and bake 10 minutes longer or until pudding is rich golden color and knife inserted in center comes out clean. Cut in squares and serve warm or cold with topping. 12 servings.
GREAT PUMPKIN COOKIES
4 cups unsifted flour
2 cups oatmeal
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups oil
1/2 cup white sugar
2 cups brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups canned pumpkin
1/2 cup nuts
1/2 cup raisins
Combine flour, oatmeal, spices, and salt. Set aside.
Cream oil, sugars, egg and vanilla on medium speed of mixer for 2 minutes.
Add 1/4 cup Libby's canned pumpkin and mix 1 minute more.
Add the remaining flour and pumpkin alternately. Stir in nuts and raisins.
Drop by rounded teaspoonfuls onto lightly greased sheet baking sheets.
Bake at 350F for 15-20 minutes or until firm and lightly browned.
Makes about 5 dozen cookies.
PUMPKIN MUFFINS
3 1/3 c. flour
2 tsp. baking soda
3 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground ginger
Mix dry ingredients and add:
1 c. oil
4 eggs
2/3 c. water
2 c. pumpkin
Preheat oven to 350F degrees.
Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.
Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.
GINGERED PUMPKIN SOUP
2 cups pumpkin, cooked
3 cups chicken broth
3 tablespoons butter
1 cup light cream
1 medium onion, diced
1 medium apple, diced
1 teaspoon ground ginger
1/2 teaspoon salt
Melt butter in a heavy saucepan. Sauté onion and apple until tender. Stir in pumpkin, broth and spices. Remove from heat.
Process or blend until smooth. Return to saucepan and stir in cream.
Heat through and serve

1 cup pumpkin (canned)
2/3 milk
1 package vanilla instant pudding
1 teaspoon nutmeg
1 tablespoon cinnamon
2 cups Cool Whip
graham crackers (to crumble on top)
Combine pumpkin, milk, vanilla, and instant pudding together in a bowl.
Add the nutmeg, cinnamon, and fold in the Cool Whip.
Sprinkle the crumbled graham crackers on top

If you think its a matter of peeling and chopping the pumpkin into usable chunks for a quick solution, then the answer would be no. Pie pumpkins are different than the typical jack-o-lantern pumpkins. Canned pumpkin filling has thickners and sugar added and the filling has been processed so its smooth and pasty. To process pie pumpkins you'd need to know how to can them. Yes I mean the big pot, canning jars, lots of pectin, sugar solutions and heat sealing. Its a troublesome event if you've never done it before. Best find someone who knows how to can fruits and vegetables. Friends with family on a farm or still own a farm typically know how to can fruits and vegetables. Also storing them isn't just a matter of sticking them in the fridge, or a cupboard. They are heat and light sensitive as well. Which is why I answerred no... it can be a yes if you are willing to process the pumpkins, but for simplicity sake, use a can.. its easier. :D

you can make this really good pumpkin pie recipie-
INGREDIENTS:
1 1/4 cups pumpkin puree, canned or fresh
3/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon all-purpose flour
2 eggs, lightly beaten
1 cup evaporated milk, undiluted
2 tablespoons water
1/2 teaspoon vanilla extract
1 unbaked pastry shell (9-inch)
PREPARATION:
Combine pumpkin, sugar, salt, spices, and flour in a medium mixing bowl. Add eggs; mix well. Add evaporated milk, water, and vanilla; mix well. Pour into pastry-lined pie pan. Bake at 400° for 15 minutes; reduce heat to 350° and bake about 35 minutes longer, or until center is set.

Pumpkin Pancakes! For breakfast or supper to!
About smaller to med. 12 pancakes
INGREDIENTS
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 cups milk
***1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar 1)
DIRECTIONS
In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Pumpkin Cookies
Ingredients:
2 cups of flower

2 cubes of butter or margarine

You could make a pumpkin soup, or candy there are recipes all over the web.
You could even make Pumpkin ravioli I saw that on a restaurant menu. I don't think I would try it.. but you never know until you take a bite

Make the same recipe tonight. If you still haven't eaten yesterdays, freeze one of them! Normally I would offer to eat it up for you, but I don't care for Pumpkin. Now if you find yourself with an apple pie you need to get rid off...look me up!
