Delicious Ham and Potato Soup

"This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great."
INGREDIENTS:
3 1/2 cups peeled and diced
potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 1/4 cups water
2 tablespoons chicken bouillon granules
1/2 teaspoon salt, or to taste
1 teaspoon ground white or
black pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk
DIRECTIONS:
1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

"This is a thick, hearty soup. Kids love this because of the cheesy flavor."
INGREDIENTS:

1/2 cup chopped onion
1 cube chicken bouillon
1 cup water
1 teaspoon dried parsley 1/2 teaspoon salt
1 pinch ground black pepper
2 teaspoons all-purpose flour
1 1/2 cups milk
1 1/2 cups shredded American
cheese
1 cup chopped ham
DIRECTIONS:
1. In a large stock pot add potatoes, celery, onion, chicken bouillon, water and parsley flakes. Season with salt and pepper and simmer until vegetables become tender.
2. In a separate bowl mix flour and milk. Once it is well blended, add to soup mixture and cook until soup becomes thick.
3. Stir in cheese, cooked ham or hamburger and simmer until cheese is melted.

Bacon Baked Potato Soup
Ingredients -
3/4 cup chopped Leek, washed well and drained
4 large Garlic cloves, chopped coarse
1 tablespoon Olive Oil
1 (1/2 pound) russet Pre-Baked Potato
2 1/2 cups Chicken Broth
3 tablespoons Heavy Cream
1 1/2 tablespoons minced Fresh Chives, Bacon Bits, and Sour Cream
Preparation:
In a heavy saucepan cook the leek and the garlic with salt and pepper to taste in the oil over moderately low heat, stirring, until the leek just begins to soften, add the potato, peeled and cut into 1-inch pieces, and the broth and the heavy cream, and simmer the mixture, covered, for about 10 minutes. At this point you can also add some grated cheddar cheese into the soup if you like. When serving, add a dollop of sour cream on top and in the center of the soup. Garnish with bacon bits and chives.

The easiest potato soup that my Dad made used left over potato salad. Put the left over potato salad in a pot, add milk, put it on low heat stir it constantly, add 2 T. bacon drippings and a little bit of butter, next add 1/4 cup water. Keep stirring add some garlic powder to this, keep stirring until really hot or till the edges start to bubble.
Serve hot with garlic french bread.
He made this on days that he was home & Mama was still at work.
It was always so yummy. I know it sounds strange because it has sweet pickes & boiled eggs in it, but it is really good.
I like it this way because it was the only time I didn't mind it, when he cooked.

2 Qt chicken stock
1 Lg onion
1/4 stick butter or equivalent
4-5 strips bacon
1c half&half
1 LB red bliss potatoes
1/4 c chives or scallians
1/2 c cheddar cheese
Dice bacon and render until crisp, reserve fat. dice onion fine and saute until carmelized.Dice potatoes in 1/2 pieces boil in the stock until fork tender.Add onions, and deglaze pan w/ some of the stock. Add 1/2&1/2. You can thicken with corn starch or a roix
1/4 cup butter 1/4 cup ap flour
melt butter, and add flour cook over a med heat for a little over 1 min. don't brown. add 1 cup of stock to the roix. Them stir until smooth (a few seconds) then add tothe soup.
2TBS corn starch
2TBS COLD water
disolve corn starch into water, add directly to soup(hot)
corn starches full thickening ability won't happen until the soup is at a rapid simmer. repeat if nec. to achive desired thicknes. (you can always add, but you can't take away)
top the soup w/ crisp bacon cheese and chives

1/4 lb bacon diced
1/2 cup onion diced
1/4 cup carrots diced
1/4 cup celery diced
2 tbs flour
3 cups chicken broth
2 cups milk
4cup potatoes cubed
8 oz cream cheese
salt & pepper
Cook bacon until crispy and remove.
Add onions, carrots and celery and cook untill tender.
Add flour and cook for two minutes.
Add broth, milk and potatoes and bring to a boil.
Turn down to a simmer and cook untill potatoes are done.
Stir in cream cheese and about 3/4 or the bacon.
Add salt and pepper to taste.
Severe the bacon you left out as a granish.

We call it Tater soup! Now this is just my recipe I usually don't measure but it's close. And I don't put ham, chicken or bacon in it but you certainly can if you want to..
First you have to have red potatoes.
About 4 med. to large red potatoes cut in 1 inch pieces
1/2 to 1 whole onion chopped small
6 cups of chicken broth, (fresh, canned or bouillon cubes)
1 cup cream (canned milk will be fine)
**1/4 cup thinly sliced celery optional
2 heaping Tablespoons of butter or margarine
1/4 t garlic powder or 1 clove chopped
bunch of green onions chopped.
1/2 spoon sugar
Salt & pepper
OK, place your potatoes, celery, butter, salt, pepper, garlic, sugar & chopped onion in the broth, bring to boil, simmer on low uncovered about 15 min. (till just tender). Your liquid should reduce some, kinda smash a few potatoes to thicken it up, then add cream & green onions. Taste & adjust salt pepper etc to your taste. Continue to simmer about 10 min. Let it set for a bit to cool and potatoes to firm. It's so simple but so so delicious!
