Whether a roast "falls apart" depends entirely on the cut, the method of cooking and the amount of liquid added. The less expensive cuts, which are usually tougher, lend themselves to being cooked slowly, and with liquid, they will quite possibly "fall apart", whereas an expensive Prime Rib, Filet, Crown Roast are meant to be "roasted" and should NEVER fall apart.
As for side dishes, you cannot go wrong with Yorkshire Pudding, roasted carrots, mashed potatoes, green salad, gravy or a sauce, green beans, peas etc........almost any vegetable will compliment a GOOD roast, it is more a matter of personal taste.

Cook it nice and slow in liquid. One such liquid is cream of mushroom soup. You'd want to sear your roast on both sides first, then pour a can of mushroom soup over it and then cover the roast and let it simmer in the soup for half an hour. Remove the cover after that half hour, turn the roast over, and cover it again and let it simmer at least another half hour. If you want to be real sure of it's being done, make it forty minutes on each side.
Serve with your choice of baked or mashed potatoes, green vegetable and a slice of garlic toast.
You can do the roast in a covered cast iron skillet on the stove top - that's how I do it. That way you don't have to heat up an entire oven - saves energy and does not heat up the whole kitchen on a warm autumn day.

Well, this is Angelika's receipe for home made roast beef.
I have tried it two versions. Once backed in the oven in a roasting pot.
The other in my slow cocker. Well, the slow cocker version I love the best.
No , roast beef it's not supposed to fall apart when done. However, if you cook it in a crock pot on medium heat, it will get very tender.
What I do is the following.
Roast put it on the buttom of the crock pot.
Pour 1/4 cup of chicken buillon in it.
Cut 1 whole onion, chopp it in small stripes
Slice and clean some carrotts. I usually slice them in half. I love to chew on something
Than add a cup full of celery in it. Let it simmer. You can do this easly why you gone to work. When you come home dinner is done.

NO!! Roast beef should not fall apart!!!
If you use quality cuts like sirloin, rib or topside then you should get great beef! if you cook well done most cuts will jus simply tighten up! I suggest you serve with Yorkshire Puddings and real gravy with some lovely root vegetables like parsnips, carrots, swede and of course roast potatoes cooked in garlic and thyme. And dont forget the horseradish sauce!

No. Roast beef is served sliced, as is prime rib. Haven't you ever gone anywhere and seen a huge Steamboat Round and seen the chef slice it at a buffet? That is roast beef and that is how it is supposed to be served.

If you have a slow cooker it will come out the best and fall apart. You can put you onions, potatoes, carrots in with the meat. Use a pack of lipton onion soup mix and about a cup of water.Cook for 8 hours in your slow cooker and it will come out great. It will definetly fall apart.
