Yes, contrary to the popular belief that the eyes of a potato are poisonous, they are not. Sometimes when a potato grows eyes, underneath the skin is greenish. This comes from prolonged exposure to light. The green part can be very bitter. When peeling the potato, make sure that all the green is gone. You can take out the eyes with the tip of the peeler. That's what it's for. If using the potatoes for baking, check one by peeling a small part first to make sure that it has not turned green underneath.

I think you are all silly. The reason that we have been taught to remove the eyes first, before cooking, etc., comes from long ago when each family grew their own vegetables...they needed the eyes in order to plant a new crop of potatoes, as they used them, so that they would have potatoes over a long period of time.

Heck, you can eat potatoes raw if you like 'em that way - but do be aware that the raw eyes are mildly toxic - the leaves and stems of the potato plant that appear above ground are poisonous, and the eye of the potato contains a very small amount of that poison. Cooking will destroy the poison, but who wants to eat potato eyes? Cut 'em out before preparing the spud for eating...

Whenever you see eyes on the potatoes, cut those out before cooking. They are tough and not digestable.
