I put the eggs in a little butter, in a pan pre-heated to medium heat, cover with lid or foil for about 3 minutes....until top of egg is solid white over yolk.

Chinese Chives and Bean Sprouts Stir-fry
This dish calls for yellow Chinese chives, which have a lighter, more "oniony" flavor than regular Chinese chives. The addition of fried egg makes an attractive light colored dish. For a more attractive appearance, remove the ends of the mung bean sprouts before cooking.
If yellow chives are unavailable, substitute 1 bunch flowering garlic chives or scallions.
INGREDIENTS:
3 cups (about 5 1/2 ounces) mung bean sprouts
1 1/2 cups (about 2 ounces) yellow Chinese Chives
2 medium eggs, lightly beaten
3 tablespoons oil for stir-frying
1 tablespoon minced ginger
2 teaspoons light soy sauce
1/2 teaspoon sugar
Directions:
Wash and drain the mung bean sprouts. Wash and drain the chives, and cut into strips about the same length as the bean sprouts. In a small bowl, lightly beat the eggs, adding 1/4 teaspoon salt and a bit of pepper if desired. Set aside.
Add 1 tablespoon oil to a preheated wok. Add the beaten eggs, swirling so that they cover the bottom of the pan. Turn over once. Cut the egg into thin strips and set aside. Clean out the wok.
Add 2 tablespoons oil, drizzling down the sides of the wok. When the oil is hot, add the minced ginger and stir briefly until aromatic (about 15 seconds). Add the mung bean sprouts and stir-fry until they change color (about 1 minute), then add the chives, soy sauce and sugar.
Stir-fry for about another 1 - 2 minutes, until the chives have just turned limp, taking care not to overcook the bean sprouts. Top the dish with the egg strips and serve hot.

In a small fry pan spray with some cooking spray so the eggs don't stick, add some butter not to much or it will splatter. Put eggs in pan and put a lid on it. Make sure you use med-low heat. When it is cooked the egg yolk with be white.

You grease a pan and add the eggs and fry until the white firms up. Done. If the eater wants them over then turn them just for a minute. Do not overcook at this point. Then onto a plate and serve.

I really like mine over medium.
I will fry them on one side until the whites are, well, white. Then flip the egg and break the yolk. Give them a couple of more minutes. It's really a timing thing, you will get better the more you do them.
