i want to serve rice, so that means any potato is out of the picture, what else?

PORK CHOPS AND APPLESAUCE just like the Brady's

Spanish rice is lovely with pork chops. Try my recipe:

1 cup jasmine long-grain rice
1-1/2 cup water
1 small can tomato paste
4 cloves garlic, finely chopped
1 carrot, finely chopped
1 celery, finely chopped
1/2 red onion, finely chopped
2 tbs olive oil
salt and pepper

Using a 2-qt pan with tight lid, heat oil on medium. Add all of the veggies and saute until mushy, season with salt and pepper to taste. Add in the tomato paste, saute for a few minutes until bright red color disappears. Add the rice, mix gently, then mix in the water. Bring to boil, then lower heat to low, cover, simmer for 30 minutes. Remove from heat, allow to set for 15 minutes.

I would serve with veg and a carb such as fanned potato or buttered pasta. If you're already serving it with macaroni, then your other side should be some vegetables. A nice big salad (mixed greens, diced cucumber, grated carrot, diced bell peppers, sliced strawberries, a sprinkling of freshly grated parmesan, and a light dressing); green beans (boil and butter); since it's in season, corn on the cob (BBQ or cook in oven, in husk, for most flavour); asparagus (try seasoning with lemon juice and/or herbs and baking); a baby vegetable medley (snow peas, baby carrots, thin asparagus, baby zucchini, patty pan squash -serve with a sauce of butter, sauteed shallots, and thyme); or stuffed baked tomatoes (stuff with butter, garlic, parsley, Worchestershire sauce, salt & pepper, and bread crumbs). Also cook off some apples or serve with applesauce, on the pork itself.

I like augratin potatoes and corn souffle

Corn Souffle:
1 package Jiffy corn bread mix
1 can cream corn
1 can corn
1 pkg. cream cheese - softenened
1 stick of butter - softenened

Mix all ingredients thoroughly, add to a greased casserole dish. Bake 45 mins at 400 or until browned on top and cooked in middle.

This is like a moist cornbread, everyone loves it!

Almost any vegetable can be served with pork chops. Must have the applesauce too

Just about any green vegetable - steamed broccoli with butter & pepper, or with olive oil and a little fresh crushed garlic.

Creamed corn makes a nice 2nd side dish.
A nice tossed salad.
Don't forget applesauce!

Actually I've heard that fried apples go well with pork chops.

cucumber salad,mashed potatos w/ gravy deviled eggs of course your pork chops steamed green beans and srawberry shortcake for dessert /w coffee
