Go to your post transportation office and they will give you a packet and answer your questions. Yes, there is a weight limit, but during my moves I came well within the limits. The transportation office will send a moving company to pack up all your household goods, mark the boxes for bedroom, kitchen, living room, etc. So don't run out and buy plastic tubs, tape, boxes, etc.
How long will it take depends on the moving company. But by the time you get or find housing, it will be there for you.
What you will want to bring with you is enough clothes to last each person for 5 or six days, some toys and games for the kids, uniforms (obviously). You will get temp housing, with a stove, refrigerator, tv. You can get dishes, pots and pans, silverware, glasses, pitchers, etc. from the self-help or moral support (I forget now what they call it) maybe the Lending Closet. Anyway there is a place where you can get that stuff on loan until you get your household goods delivered and you are set up in your new residence.

Yes, there is a weight requirement...and it is done by Rank...when your husband goes to Transportation, they will let him know how much weight he is allowed...it is usually more than enough..I would recommend that you let the packers pack your stuff, because if they don't and it gets broken, you can not claim it...only thing I would tell you to pack yourself is your valuables (jewlery, take it with you on the plane) and video games, dvd players, and stuff like that...or either FED EX them to yourself, but if you ship them do not put what they are on the outside of the box or they will be gone...not sure about Germany, but when I moved to Hawaii it took about a month and a half to get my stuff...but if you go on leave first for a month and ship the stuff before you leave your duty station, your wait time will not be as long... and it took about 30 days for my vehicle coming back to CONUS...hope this helps...

Yes there are limits to what your husband can bring. When dealing with the military you are not part of the equation except that he is also bringing you. The post transportation office will tell you everything you need to know.
When we were in Korea, my ex wife worked for the transportation office- they have contractors that pack it all and take it away- most of our stuff arrived stateside BROKEN but it did get to us and because THEY packed it, we were paid replacement value.

75% of his weight allowance for CONUS PCS moves. unaccompanied Baggage can only be 1000 pounds.

it depends on his rank and the Army transportation office will pack everything for you!
it will probably get to Germany within 3 months.
the big question?.
Housing might be up to a year wait!
pack separate boxes for bare necessities(pots, pans, glassware, silverware, linen, towels, etc...) in case you have to stay in temporary housing or transient lodging!
