Or is it the same since it will still be cooking in it's own juices? I seriously feel weird asking this question but am curious.

If you bake it on a rack it may be slight less fattening since the fat drips away from the bacon.

If you bake it in a baking dish sitting in it's own fat, then it's the same as cooking in a skillet/pan.

Pan frying, microwaving and baking all remove about the same amount of fat. Grilling is a good option as well. Keep in mind that a lot of restaurants actually deep fry their bacon, so cooking it yourself is a lot healthier, lol. But the bacon grease can be saved and used in other recipes, such as the kick butt potato salad I make. Most of the absorbtion of fat occurs as the bacon cools and the fat starts to resolidify, so do your cooling on paper towels or racks to whisk away the extra. If you need the extra health from low fat bacon, try turkey bacon, it's got a lot less fat than pork. Good luck!

When you bake bacon, put it on a rack inside a jellyroll pan. The bacon drippings are then under the rack and it seems there would be less fat. It's also less messy! Bake at 400

I think it would be better if you baked it/cooked it in a special pan where it has something it catch the grease below so its not soaking up its own fat again. Though Turkey-bacon is better for you (it is leaner), and it tastes just fine (even surprisingly good!).
Hope this helps.

When you cook bacon in a skillet you can drain the strips on paper towels. When you bake it in an oven it's easier, but the flavor won't be quite as strong. It's a personal choice and/or preference. I prefer cooking it in a skillet for optimal flavor and letting it drain on paper towels..

Baking on a rack on the oven - crispier, less messy. Blot with a paper towel afterwards to soak up even extra grease!
To save on clean up, place aluminum foil under the rack.

Lamentably you did not invent this, persons and sandwich bars and so forth have been using baby spinach as a substitute of lettuce for years because it doesn't go brown as rapidly. And yes it does taste rather good.

If you subscribe to the theory that the fat drips off istread of the bacon sitting in it, they yes, it you be less gereasy/fatty.

I have heard that it is and I tried baking it once, it took forever. It was less of a mess though.
