Go out and buy one of Rachel Ray's cookbooks (she has the 30 Minute Meals show on FoodNetwork). Her recipes are EASY. Very basic, simple cooking techniques, and they all take 30 minutes or less. Good luck!

Meatloaf, mashed potatoes and a veg.

Meatloaf is simple......a pound of chopped meat. SOme supermarkets have a 'meatloaf mix' of beef, pork and veal.

In a bowl, mix meat, egg, breadcrumb, a packet of onion soup mix, a little ketchup. It should be moist but still hold together. Form into a loaf in a baking dish. Bake at 350 for about 20 minutes. After the 20 minutes pour a SMALL can of tomato sauce over the meatloaf. Bake for another 15 minutes. I usually put a couple of slices of bacon on top before I put it in the oven.

After you put the meatloaf in the oven, cut up some potatoes. Put into a pot of cold water, add a clove of garlic. Boil away until they are soft...poke a fork in. If it pierces easy, it's ready. Drain the potatoes. Add some butter and milk and mash awa

Save yourself a headache and buy the new steam in a bag vegetables. You pop them in the microwave and in 4 minutes they're done!.

You can't go wrong by making a weekly menu meals that include both you and your fiance's favorites. You might consider making dishes that can be used later in the week for another meal, such as chicken, pork roast, etc. In addition to a couple of recipes I'm including, you might want to check out Taste of Home. Great stuff!

Easy Pork Chop Casserole

4 pork chops, bone in, 1/4 inch thick
1 box Kraft Mac and Cheese
1/2 yellow onion
3 T olive or vegetable oil

Season chops with Seasoned Salt and fresh ground pepper while oil is heating in skillet. Saute chops and brown on both sides. Remove from heat. Prepare Macaroni and Cheese according to package directions and place in baking dish. Top with chops. Slice onion into rings and saute in skillet until translucent. Place some of the onions on each of the chops. Cover and bake at 350 degrees for 35 minutes. Serve with green beans or salad.

Meatloaf a Man Will Love:

2 lbs lean ground beef
1 yellow onion, diced
1 Tsp kosher salt
1 tsp Beau Monde or Bon Appetit seasoning (or 1/2 tsp celery salt, 1/2 tsp onion salt)
1/2 tsp fresh ground pepper
2 T Worcestershire sauce
2 eggs, beaten
1 cup Italian Bread crumbs
1 15 oz can diced tomatos
5 slices bacon, chopped
1 small can tomato sauce
3 T brown sugar
1 tsp dijon mustard

Mix meat with eggs, salt, seasonings, and Worcestershire sauce, and set aside. Saute bacon and onion until translucent. Add diced tomatos and bring to boil. Simmer and take half of the mixture and add to the meat. Mix well and add bread crumbs. Form into loaf and place in baking dish. To remaining tomato mixture, add mustard, tomato sauce, and brown sugar. Simmer until reduced and pour over meatloaf. Cover and bake at 350 degrees for 1 hour. Serve with mashed potatos and a green vege.

Invest in a really good cookbook (Better Homes & Garden is the one I like the most), the one with just the basic ways to cook beef, pork, poultry and fish dishes without getting into all the gourmet ways of cooking. You'll get better with trial and error, so don't feel bad if you mess up a recipe starting out. You'll soon be cooking your very own Thanksgiving Dinner.

Shopping list
Bag of frozen breaded chicken breasts/tenders
Box of DeCecco Brand pasta
Jar of your favorite tomato sauce
Frozen garlic bread

Prepare a large pot for cooking your pasta.
Add 3 tablespoons vegetable oil right away-to keep water from boiling over.
Pre-heat oven to specifications on bag of frozen chicken.
Bake the chicken following the directions on package.

*Depending on the cooking specifications on the garlic bread, you should be able to heat garlic bread at the same time as chicken. Adjust the amount of time you cook the bread for according to the difference in cooking temperature between chicken and bread.

When water has come to a full boil, add a good palmful of salt.
Mix to dissolve salt.
Add pasta to water and cook the pasta until there is only a little bite to the pasta-al dente.
Strain-do not rinse pasta.
Return pasta to the pot you cooked it in and add tomato sauce and thoroughly combine.
Spoon some of your favorite tomato sauce onto the cooked chicken.
Sprinkle Parmesan cheese on top of sauce.
Place grated mozzarella on top, next.
*Cook the bread until golden brown.
Heat in the oven until cheese is melted and you can broil it until the cheese gets a nice brown color. (*Don't use broiler until you have removed the bread from the oven).

Serve the chicken on the bed of pasta with the side of garlic bread. Enjoy.

Hope this helps. Happy cooking.

Ok, one VERY simple, quick and tasty option is this:

most guys like meat and potatoes, so go to your local grocery store and buy a pound of roast turkey breast, chicken breast of roast beef and a packet of gravy mix (brown, mushroom, or onion for the roast beef, chicken for the chicken or turkey). ASK FOR THE DELI TO SLICE THE MEAT THIN!

make the gravy mix according to directions (I'd recommend homemade gravy, but I have afeeling you don't know how- no offense) and add the meat to the gravy. let simmer untiul gravy thickens.

Also, get a box of stovetop- super super easy- it can be fixed in the microwave and make mashed potatoes (homemade or instant, but if you use instant- use more milk and less water).

Good luck!

Go to food network dot com and look up 2 tv shows: Rachael Ray's 30 Minute Meals and Robin Miller's Quick Fix Meals. Both feature quick and very easy instructions for good meals. YOu need to learn to cook NOW for your son to eat properly and develop godo habits.

And tell your fiance to keep his opinions about your cooking to himself, unless he's got a compliment to share.

OK, this is cheap, quick and isn't completely terrible!

Stove Top Chicken Dressing
Slices of deli turkey
Jar of gravy
Canned veggie

Make the dressing as instructed, adding the turkey (chopped) in the process. Heat gravy to ladle over. Heat your veggie, and voila! Turkey dinner.

Go to the library and browse through the cookbook section. You'll find one that suits you. Once you do, buy the book. And while you're there, read a book or two to your child.
