Canned foods are cooked in the can, sealed and heat treated again to kill any pathogens.
So there's no bacteria to rot the meat and the cooking destroys any enzymes naturally occurring in the meat that would cause rotting too.

It's actually treated before the can and then heated once sealed. Most canned items also use salts and nitrates (for meats) for preservation.

Because ti's been cooked and is sealed airtight in a can. Oxygen is no friend to food. But if it's been canned, all oxygen is sealed out, making the food shelf-stable. That's why canned foods make that little "whoosh" sound when you begin to open them, oxygen rushing in.

If it's in a can, it is already preserved and most probably cooked. Refrigerate it only if you want to eat it cold.
