There are a ton of things, including sadwiches. Try making a cubano sandwich or a ham salad sandwich.
One of my favorite things to do is make a potatoe casserole. I don't know any other way to explain it. My grandmother used to make it, and my mom used to make it until she discovered her cholesterol was a little high. Not the healthiest thing every day, but for a cool night, it's great comfort food.
I don't have exact amounts, but I can get you close enough. Butter a casserole dish and then begin to layer, thin slices of potatoes (I use a mandolin, but you can use a knife or if you have a food processor you can use the slice blade for this as well first, then salt and pepper, next a slight dusting of flour, maybe 1 tbsp. for each layer. Next really thinly sliced onion or you can use onion powder or chopped scallion and then cheese. I prefer grueyere, but any will do. Try swiss that would be good as well. Oh, I almost forgot the ham. Use small diced ham in your final layer. Repeeat until your casserole dish is full. Make sure that you salt and pepper each layer of the potatoes. End with a final layer of potatoes. Pour on almost 2 cans of evaporated milk. Let this cook covered at 350 for about 1 hour. Then take the cover off and cook for another 15 minutes. YUM!
Also quiche. This is my basic quiche recipe, I just add whatever else I am going to right before I cook. Ham would be great in this.
INGREDIENTS
3 tablespoons butter, softened, divided
1 (9 inch) unbaked pastry shell
1 large onion, chopped
2 cups shredded Swiss cheese
1 tablespoon all-purpose flour
3 eggs
1 cup half-and-half cream
1/4 teaspoon salt

DIRECTIONS
Spread 1 tablespoon butter over bottom of pastry shell; set aside. In a skillet, saute onion in remaining butter until tender. Spread in pastry shell. Toss Swiss cheese with flour; sprinkle over onion. In a bowl, whisk the eggs, cream and salt. Pour evenly over cheese.
Bake, uncovered, at 400 degrees F for 10 minutes. Reduce heat to 325 degrees F; bake 30-35 minutes longer or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

You can make an egg cassorole with it:
HAM AND EGG CASSEROLE
2 doz. beaten eggs
3 green peppers, chopped
2 cans drained stewed tomatoes
2-3 lb. ham, cubed
1 stick butter, melted
2 lb. Velveeta cheese, chopped in cubes
8 oz. sour cream
2 (4 oz.) cans sliced mushrooms, drained (optional)
Mix all ingredients together in large bowl. Pour into two 13 x 9 inch casseroles, sprayed with Pam. Bake at 350 degrees for about 45 minutes. Recipe can easily be halved, or partially bake one casserole and freeze

Gosh...hundreds of good dishes. Grilled ham and cheese sand., ham and macaroni & cheese casserole, ham boiled with potatoes, cabbage and beans, a ham salad, similar to tuna or chicken salad, and finally soup with the leftovers and bone- ham & bean soup.

My favorite way to use leftover ham is to cut it into small cubes, mix with cold, cooked rice and pineapple chunks, sprinkle with a mixture of brown sugar and butter (very little is needed) and bake in the oven until it's hot. Easy, and in my opinion, delicious.

i make mac and cheese add ham as much as you like and green bell pepper again as much as you like put into a bakeing dishes take about a cup or more of milk and 2 eggs wisk it then pour over mac and cheese mix put into a 350 over bake till eggs have firmed the mix really good my kids love it , another one its a sandwich but good take a few slices of ham warm up in a skillet make some p.butter toast then put ham on it nice and warm you will like it alot i hope lol .

dice the ham in small cube, scramble an egg, green onion, little soy, salt and ground pepper.

you could make a hash with diced ham , cheese , diced potatoes , onions , garlic , bell peppers and put an sunny side up egg on top or you could make ham and cheese omelet with a different cheese that you like or you can make a monte cristo with ham , cheese , dijon mustard and dip the sandwich in a scamble egg and fry it on both sides

One of my favorites is to take fresh green beans and potatoes and cut the ham into cubes and let it all cook together. So good!
