Is there anything special that you have to request to be done with the film, or do you just hand it to them??

You'll end up giving the film to the photo processor. Just be prepared, chances are it will need to be sent out to their outlab. Most retail photo processors don't have the necessary lenses, negative carriers, and the like to print medium format film.

No they should know what to do if your doing in a professional lab but usually it would be done the same way as regular size film the size doesn't matter when it comes to how to develope it. It only matters if your film is black and white or colour.
