SWEET POTATO CASSEROLE WITH
MARSHMALLOWS

8 average size sweet potatoes
1 tbsp. vanilla
5 tbsp. sugar
1/2 stick butter
1/4 tsp. cinnamon to taste
1 tsp. nutmeg
1/4 cup orange juice
Marshmallows (large or miniature)
Cinnamon sugar

Boil (or bake) sweet potatoes until done. Remove peeling from HOT POTATOES and mash well, removing all strings. Add all ingredients but marshmallows and cinnamon sugar; mix well. Spray or grease lightly Pyrex or Corning dish. Put a layer of potatoes, layer of marshmallows until filled. Sprinkle cinnamon sugar for added flavor. Bake about 350 degrees F until HOT. Remove from oven and put marshmallows on top. Place again in oven to brown lightly. Serves 10 to 12.
You may add 1 cup scalded homogenized milk to potato mixture for a richer casserole.

Orange extract may be used instead of orange juice. It is stronger in taste so add carefully to taste.

Sweet Potato Casserole

INGREDIENTS
5 sweet potatoes, sliced
1/4 cup reduced fat margarine
1/2 cup packed brown sugar
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

John B nailed it. Actual yams are unavailable in most of North America, but in some areas (particularly the US south) the name is used to refer to sweet potatoes. If you're using an American recipe and it calls for "yams" or "sweet potatoes," they probably mean the same thing, even though the naming is technically incorrect. The Wikipedia page on yams can show you what an actual one looks like.
