What is the baking process cutting in? How would you demonstrate that?

It's the process of working a cold fat into a flour mixture until it's distributed as small pieces throughout the flour. It's done with a pastry knife, two knives or (easiest) a food processor.

lets say you are going to make home made biscuits. mmmm put the self rising flour into a bowl. add a spoon of crisco. take a fork and mash the crisco into the flour. keep doing it until it is all mixed up and your hand hurts... that is the baking term cutting in. there is a special tool that can do it too at kitchen stores.

That's using two knives to cut up shortening or lard into flour or other dry ingredients. You scissor the blades together making small bits which blend easily into the dry mix. Also used for this is a multi-wired pastry tool.
