Kobe beef is rare, and producing it is an expensive, time consuming process. There are three main factors that make Kobe beef so tender and succulent. The Wagyu breed of cattle, the regular massaging of the cow to blend the fat into the muscle, and the diet of beer given to the cow to stimulate appetite. If you ever get a chance to look at a cut of Kobe beef before it is cooked, you will notice that fat is interspersed in the meat in tiny pockets. How they are able to do this is still very weird to me, but it makes the steak taste oh so gooooooood....
In the U.S., Kobe beef producing cattle have been crossbred with American cattle, and Kobe beef produced in the U.S. is generally less expensive than in Japan. Kobe beef sells for over $100 a pound in Japan. Most believe that although the Kobe beef in America is good, genuine Kobe beef can still only be found in Japan.

Kobe Beef from the Wagyu cattle is expensive partially due to the fact that the only place you can truly get Kobe Wagyu is from the Kobe region of Japan. Even though the Japanese have allowed other area's to raise Wagyu cattle, they still have to be brought back to kobe for slaughter, which is still a guarded secret as to how this is done. Wagyu cattle are massaged daily, and reports of farmers also bathing the hide of the animal in Sake' and feed the animal beer and beer making by-products all contribute to the high cost. Wagu Cattle same as Angus in the US are considered best quality of beef due to the marbling and tenderness of the meat. The other driving force in the high prices are the demand for Kobe beef, especially in the US, where beef imports from Japan are still restricted. Demand is high, supply is low, price goes up. Kobe Beef tastes very good because the cows there are fed Sake and they find it somewhat makes the meat tenderize and they rub Sake on the cows because they think it makes the meat taste even better. They mostly feed the cow grass that has been flavored with Sake. That's what I have seen from Food Network :D. But this is what I think why Kobe beef is soo good. Because its just really good.

True Kobe on come from Kobe Japan. Wagyu is the kind of cattle that Kobe comes from, so if it comes from anywhere other than Kobe its Wagyu beef. American kobe beef is just Kobe style beef.

Kobe Steak is named for the capital of Japan, Kobe. Actually the Japanese Cattle are Wagyu breed. So when they say Kobe Style Wagyu beef, ... those cattle are the same cattle, japanese cattle, raised outside of Japan. So Kobe beef is Wagyu cattle raised inside of Japan. I hope that makes sense. lol.
There are limited resources in Japan regarding pasture for cattle, feed, etc. thereby the high price.
Even I learned a little on this one. We used to raise Simmentals and cross with angus, to me that was a great steak. That was a great question. Thanks. ma

Wagyu is a breed of cattle, and its called Kobe because its slaughtered in Kobe Japan. If its not slaughtered in Kobe, it can't be called Kobe. Wagyu beef has a really good taste due to the texture and marbling of the meat.
Me I'll take Good American Farm Raised Angus any day!

The cows are given preferential treatment. I believe they are massaged at least once a day and given the best feed possible.
