Only way would be to ask her and trust in what she tells you and even if she was a bargirl it should really not be a that big of an issue.

What does it matter? Maybe she wasn't a bargirl, but was a stripper instead or lived with her grandmother up until six months ago. Or maybe she killed someone. There are a lot worse things than a girl working in a bar. Besides, if she's changed and adopted a more chaste life, then it really doesn't matter because she has put that old life aside. Accept her for who she is now, and not who she was before, or the relationship will never work.

What? She's your girlfriend and you haven't met her yet? And what difference does it make if she was a bargirl? It would be nice if you put up some more details.
