Corn Casserole

Ingredients
1/2 cup butter, melted
2 eggs, beaten
1 (8.5 ounce) package dry corn bread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can creamed corn
1 cup sour cream
Cooking Instructions
Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.

In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.

Bake for 45 minutes in the preheated oven, or until the top is golden brown.

***CHICKEN ON THE RANCH***

Number of servings: 2 to 4

INGREDIENTS
1 tbs butter
2 to 4 chicken breast halves or thighs( thawed)
1/3 cup onions
1/3 cup of Ranch dressing or 2 level tsps, dry Ranch salad dressing
2 cups rice
4 cups hot water

INSTRUCTIONS
In a large frying pan, sauté onions until just tender . Add rice and
heat until rice starts to lighten. Add hot water, Ranch dressing and stir
until blended. Bring to a simmer and place chicken on top. Cover and let
simmer for 20 to 25 minutes. Turn off the heat, lift lid and place a
paper towel over the top, then replace the lid. Let stand for 5 minutes
more.

Chicken w/ Mushroom Sauce

1) Brown boneless, skinless chicken breasts & place in baking dish.

2) Take 1 can of cream of mushroom soup & mix w/ a bit of milk &/or sherry to thin it a bit. Pour 1/2 over chicken breast.

3) Sprinkle a layer of seasoned stuffing croutons over the chicken & sauce.

4) Pour the rest of the cream of mushroom sauce over the stuffing & sprinkle w/ cheddar cheese if desired.

5) Bake in pre-heated 350 degree F oven for 25-30 minutes.

This is one of the most simple recipes I have, My mom gave it to me after I moved out. It's for leftover enchiladas that are AWESOME! My wife and I love it.

*2 cups of cooked, diced chicken or turkey (I usually dont have this left over, so I buy a pre-made rotisserie chicken and take all the meat off)
*4 oz. can of diced green chiles
*1 cup of green chile salsa (I use salsa verde)
*2 1/2 cups Jack cheese
*2 cups of whipping cream
*8-20 6" flour tortillas
*Salsa, Sour Cream, and whatever else you want to put on top.

*Pre-heat oven to 350*
*Combine chicken/turkey, green chiles, 1 cup of green salsa, and 1 cup of jack cheese in a bowl
*Scoop a spoonful of filling into tortilla, turn in sides, and roll up. Place close together in 9" x 13" glass baking pan.
*Pour 2 cups whipping cream over enchiladas
*Sprinkle 1 1/2 cups cheese over enchiladas
*Cover with foil.
*Bake 20-25 minutes until bubbly.
*Serve with rice and enjoy!

Makes great leftovers!

Fresh Garlic sliced and flashed in the pan with olive oil (oh Popeye).
Spaghetti (use smart pasta 51% whole wheat, less carbs).
pour oil over cooked spaghetti, add fresh cracked black pepper, fresh lemon juice, fresh "Locatelli" brand romano cheese......YOU ARE THERE !

Place a chuck roast into a dutch oven. Cover with 2 cans of diced tomatoes, 2 cans of water, 1 diced onion, 2 cloves of diced garlic, 2-3 bay leaves, salt, and pepper. Turn to medium high until boiling then turn to low for simmer. Cook for 2-3 hours until meat pulls easily away from the roast. Discard bay leaves and follow directions below.

Now that you have this meat you can make a TON of different things!

Beef Burritos
Pull meat apart; remove and discard any fat. Dice fresh tomatoes and green onions. Grate jack and cheddar cheese. Put out sliced olives, salsa, sour cream and guacamole. Put about a 1/4 cup of meat on a flour tortia. Add your favorite toppings. Roll and eat.

Pulled Beef Sandwiches
Pull meat apart; remove and discard any fat. Add your favorite BBQ sauce to the meat. Put on top of hamburger buns or your favorite rolls. I like to toast mine first. Serve with coleslaw and chips.

Beef Stew
Pull meat apart; remove and discard any fat. Pour cooking juices into metal or glass container with lid. Put in refrigerator overnight. Skim hardened white fat from top of juice. Heat juices back up to boiling. Add between 2-4 cups of beef broth (NOT bullion cubes!!!) as the roast will not usually make enough for a whole pot of stew. Add peeled sliced carrots, and cleaned and quartered red potatoes. Turn down to simmer and cook until veges are softened. Put meat back in juices. Mix 4 tablespoons of flour with 1 cup of water until smooth (no lumps. Add flour mixture to stew slowly stirring it in to ensure flour does not cook before it is mixed in; again you don't want any lumps. Salt and pepper to taste. Serve with good bread.

Beef and Barley Soup
Pull meat apart; remove and discard any fat. Pour cooking juices into metal or glass container with lid. Put in refrigerator overnight. Skim hardened white fat from top of juice. In a separate pot cook 1/2 cup of barley in 3 cups of water; this takes about 1-1/2 hours. Heat beef juices back up to boiling. Add between 2-4 cups of beef broth (NOT bullion cubes!!!) as the roast will not usually make enough for a whole pot of soup. Add peeled sliced carrots, fresh green beans cut into 1" pieces, diced celery, peas, and/ or lima beans (use your favorites here). Turn down to simmer and cook until veges are softened. Put meat back in juices. Drain barley, rinse well, and add to soup. Salt and peper to taste. Serve with crackers.

Beef Stroganoff
Pull meat apart; remove and discard any fat. Pour cooking juices into metal or glass container with lid. Put in refrigerator overnight. Skim hardened white fat from top of juice. Heat juices back up to boiling. Mix 4 tablespoons of flour with 1 cup of water until smooth (no lumps. Add flour mixture to stew slowly stirring it in to ensure flour does not cook before it is mixed in; again you don't want any lumps. Put meat back in juices. Salt and pepper to taste. While meat and gravy are cooking boil 1 lbs. of noodles, cook and drain. Serve meat and gravy over noodles.
