I quarter my baby red potatoes. Then I toss them with olive oil,thinly sliced onion, whole grain mustard, ground mustard, garlic, garlic powder, salt and pepper. Then roast them in a 375 degree oven for 50 minutes or until tender. Stir them often.

My favorite with red potatos and or new potatos is with Dill
Wash the potatos and then quarter them (make them bited size, may take more than quartering) then place in bowl and drizzle some Olive oil over top to coat. I use fresh dill, but the dried dill works just as well, I sprinkle dill weed all over potatos and toss to coat evenly. Then spread out onto baking sheet, and roast in oven at 350 for about 30 minutes. Makes excellent roasted potatos and goes well with Chicken, Beef, and seafood.

ROASTED ROSEMARY NEW POTATOES
3 lbs. sm. red skinned new potatoes
3/4 c. unsalted butter
1/2 c. lemon juice
1 1/2 tsp. lemon zest, grated
2 tsp. rosemary
Salt and pepper
Preheat oven to 375 degrees. Quarter potatoes and arrange in baking dish in single layer. Salt and pepper potatoes. Combine butter, lemon juice and lemon zest in a saucepan and heat until butter is melted.
Pour mixture over potatoes. Sprinkle rosemary over potatoes. Bake until lightly browned for 30 to 45 minutes.
BIVALVE FLAVORED BAKED POTATOES
1 pt. shucked oysters
1/2 lb. scallops
1 sm. green pepper, chopped fine
3-4 celery fronds, chopped fine
1 lg. Italian onion, chopped fine
Lots of finely chopped parsley
Ground black pepper
Ground thyme
1/2 lb. thick sliced Polish ham, diced
1 qt. light cream
3 tsp. flour
A lot of red-skinned potatoes, washed well and thinly sliced
High quality bread crumbs
Laminate the solid ingredients into a shallow of deep baking dish in the following order: onions, pepper, celery, oysters (including shell liquor if present in the container), ham, scallops, potatoes; disperse the parsley, thyme and black pepper throughout during the lamination process. Cover the dish tightly with plastic film and place in microwave at medium power for a period sufficient to cook the celery.
Mix the flour in a few tablespoon cold water by shaking it violently in a tightly closed jar. Pour the flour suspension all over the cooked ingredients in the dish; light stirring might be in order. Now add the cream until the liquid level is slightly below the surface of the mix. Sprinkle the top with a generous layer of bread crumbs. Place uncovered in a heated oven and bake until the juice bubbles up around the edges and the surface is nicely browned.

all i do is chop them up (washed first of course) and throw them in some water to boil, add butter and salt and eat.
