Baked Custard
3 eggs
1/4 cup sugar
2 cups milk, heated
1/2 teaspoon vanilla essence
pinch of nutmeg
In a saucepan, whisk eggs, sugar, heated milk and vanilla together. Pour custard into a 20cm pie plate. Sprinkle with nutmeg. Set pie plate in a shallow pan of water. Bake at 150oC for 1 hour or until set. Serve hot or cold.

COCONUT COCOA CUSTARD
4 tablespoons custard powder
5 tablespoons sugar
2 cups milk
3 tablespoons cocoa
1 tablespoon butter
3 tablespoons coconut
1 teaspoon vanilla extract
Mix cocoa, custard powder sugar and butter in a small bowl. Microwave on high for 6-9 minutes or cook and stir over medium heat, gradually adding the milk. After you're finished, add vanilla and coconut; stir.
Serve warm or at room temperature.
