hi-the other nite we had enchaladas.o.k.use any cut of chicken.bake or boil about one hour until done.remove all skin & bones.cut,tear or shred into bite size pieces and pour a jar of any flavor red or green salsa over chicken & stir together.shred any kind of cheese.we like colby/jack.you can use corn or flour tortillas.oops,leave a little salsa to cover the bottom of your baking dish.place a tortilla in dish top with chicken mixture and some cheese,roll up.slide all the way to one side and do the same with the rest.if you want top the enchaladas with some salsa & cheese.bake at 400 for 20min. enjoy!you can find alot of good recipes at allrecipes.com-everydayfoodmag.com-rachaelray.com-foodnetwork.com

Fajitas:

2 Chicken breasts, or equivalent steak, bite size pieces
One Onion, bite size pieces
One Red Bell Pepper, bite size pieces
One Yellow Bell Pepper, bite size pieces
One Green Bell Pepper, bite size pieces
1 Tbspn Crushed Garlic
Olive Oil to coat
3/4 cup Fresh Cilantro or 3 Tblspn dry
2 Tspn Cumin
Salt to taste
Lime Juice

Mix everything together in a bowl. If you have time, let it marinate a hour or so. This part is a little bit tricky, I usually use a wok, because its a lot! Separate the peppers, the onions, and the meat. Brown your meat, place aside. Begin to cook the onions, and when they cooked about half way, add the peppers. When the onions are clear, and the peppers are just about done, add your meat back in, and finish. Serve with the usual: sourcream, cheddar cheese.

Serves four

**********RANCH STYLE HAMBURGER BEAN PIE
3-4 (15 oz.) cans "Ranch Style" brand beans
2 lbs. hamburger meat
1 lg. onion, chopped
Your favorite cornbread recipe for topping
Pour the beans into a 9x13 inch baking pan. Fry hamburger and onions until done, seasoning while cooking with salt and pepper. Drain. Mix together with beans in pan.
Make cornbread batter and spread over top of bean mixture. Bake in 400 degree oven until cornbread is done in the center. Great served with fried potatoes.

SAUCY STEAK SPECIAL

1 ½ lbs. round or family steak
1 Tbls cooking oil (your choice)
½ cup chopped onion
1 10 ½ can tomato soup
½ cup water
¼ cup sherry
1 Tbls cornstarch
2 Tbls Worcestershire sauce
2 tsp soy sauce

Cut meat into serving size or bite size (my preference) pieces. Brown in oil in large fry pan. Add onion and cook until tender.

Stir in soup, water and sherry.

Combine cornstarch with Worcestershire sauce and soy sauce. Add to meat mixture and blend well. Simmer, covered, about 1 ½ hours until meat is tender, Serve over noodles or rice.
