It does sound nuerological/nueromuscular. I would see a nuerologist if you haven't already. Don't give up until you get an answer. You may even want to try the Mayo clinic if you can afford it. There is one in AZ and one in Wisconsin. They specialize in difficult cases.

My husband has a nueromuscular disease related to his gulf war service. It took us a long time for him to get a definite diagnosis. Had the Mayo clinic not helped us, he would not be here today. His breathing is deeply effected by the nuerological disease.

I hope you can get to the bottom of the problem. Do NOT feel bad this is not something you can control. It is a normal nuero reaction for your hands to do that with nueromuscular diseases.

If you can override the problem easily when you want to, and the problem occurs only when you are not paying attention, then its probably now a habit. You can undo a bad habit by paying attention to your hands when you are not using them (especially when you are in bed - try to sleep with your hands in a more normal position). Stretching/strengthening your hands may also help.
