it depends on the setting. If I expected it and it was a silly party or something, I'd probably be fine. Otherwise, it would freak me out.

If I were in a restaurant, I wouldn't expect my potatoes to be blue, unless there was some sort of promotional event going on.

I've added food-grade coloring to assorted foods, for one reason or another (Halloween treats, etc), so no, I wouldn't be "freaked out" by blue mashed potatoes.

By the way, I make potato dishes using waxy purple potatoes all the time. They stay purple even after they're cooked, and sometimes people are surprised to learn that it's their natural color.

No- I've had green mashed potatoes for St Paddy's day, but like the others have said, it's nice to know in advance, and to know the reason for the color choice.

as long as i knew what it was - that was making the potato blue, then NO! It's just fun and a different colour. When my sister was little she loved making cakes for us with food colouring in - producing blue cup cakes, red icing etc.

I probably wouldn't like it. I'm sure it would taste fine but the very idea of blue potatoes would ruin my appetite. It would remind me of mold or something gross like that.

As long as I knew that it was blue food coloring I would be fine. Why? It kinda sounds ominous;).
Also, it depends on the setting and who is giving it to me (or serving it, etc.).
