when just "wheat flour" is listed on the ingredents list on the nutritional facts, i know its not whole grain, but would it be bleached, unbleached, or what?

All you know is that the flour is most likely regular flour.
It could be bleached or unbleached. However, if it's unbleached many manufacturers will point that out since it is a selling point for many people.

Most flour used in processed foods and I believe that's what you are referring to is going to be bleached flour. I don't know if food processors use unbleached flour. Don't be afraid of bleached or unbleached flour. The difference is really in the chemistry of the protein and affects the functionality. Bleaching simply ages the flour faster. The other thing you will hopefully see is enriched. Most flour should be enriched by now.
