All Saints day is for the Saints in Heaven and All Soul's Day is for the souls in puragtory.
All Saint's day was created by the Catholic Church for the saints who are in heaven, whose names may not be known - similar in concept to the Tomb of the Unknown soldier.
All soul's day is for the souls that are destined for heaven but are still in purgatory. It is a day to pray for the souls in purgatory. This is probably the origin of the Mexican festival of el Dia del Muerte

All Souls Day and All Saints Day were invented by the Christian Church when it invaded Europe as a means to try and lure the "commoners" away from celebrating Samhain in an attempt to eradicate paganism in Europe.

"All Saints" is to commemorate Martyrs, Passion-Bearers, Fools for Christ, Unmercenaries*, Holy Hierarchs, and Righteous Leaders.
(An "Unmercenary" is someone who gave up all he/she had in worldly wealth and used all he/she knew to care for others.)
"All Souls" is to commemorate all the other departed Faithful. They are not close together. All Saints is the first Sunday after Pentecost, while there are several Saturdays that are given over to the commemoration of All Souls.
