If you want seeds that look and taste like the ones you buy in packets at the store, you can do what I do.

Separate seeds from the pulp.
Rinse the goo off the seeds.
Put in a quart or more of water - salted with 1/4 cup of salt.

Bring to a boil and simmer until you can see the green seeds through the shell.

Drain, let dry and put the seeds on a cookie sheet. Put the pan in the oven on warm and leave in overnight. The seeds will be dry, nice and crisp, and will be white just like the 'David' brand of pumpkin seeds..

Crunch away!

You can toast the seeds with salt in the oven and for the guts you can make them into a pie which i don't really like the idea of or you can try making a pumpkin puree or cider.

i do some in home support work with a woman who is paralized on one side and in wheel chair. she feeds herself but cannot do a lot of things. Her husband prepares a big fruit bowl every couple days for her to make sure she getting fruit. she eats it with muffins or alone.
He grinds up the whole pumpkin, outer skin and all until it is real fine. this is the base for the fruit sauce. you still have to pick out the occasional chunk of shell but he freezes several batches. he uses them for pumpkin pie, and the fruit sauce which he also adds several different berries, banana, apple, pear, peach...whatever he has in the freezer, then along with a bit of honey and cinnamon..cooks for about 20 min, and viola...it is super tastey. i had to make it one time...it would be good over ice cream.
i have had the pumpkin pie before as well
they dont waste anything
who woulda thought

Pumpkin seeds are good to eat. Soak them in saltwater for a while and put the entire mix in the oven, and you've got yourself a snack.

You can put it near the mouth of the carved pumpkin. This way it gives the impression that the pumpkin vomits.
