Another one of my wonderful Mom's recipes.

3 Eggs
1 tsp. Vanilla
11/2Cup Milk
3TBS. Butter
2 1/2 Cup Flour
2 1/2 Tsp. Baking powder
4TBS. Sugar

Beat Eggs,Vanilla & Milk together. add butter, Sift all dry ingredients and beat lightly as you gradually add the flour mixture. All liquid may not be used to reach pouring consistency needed for fluffy hot cakes.
pour onto hot oiled griddle coking over medium heat until you see bubble starting to pop on the hot cake turn and let cook until light brown on other side. serves 4 to 6

You can either buy them or combine a little half a teaspoon or so of baking powder then add an egg or two with some flour a teaspoon of vanilla and sugar or no sugar if you want,and if you like chocolate chips or blueberries add the chips to the flour before mixing so they all don't end up on the bottom. Add some milk or water to it and heat up the pan with any type of oil and wait till big bubbles come up then flip it over until it is a least a golden brown and fully cooked and eat with anything you like.

Buy pancake MIX--just add water. Put about 1/2 TB butter flavor Crisco in large frying pan--heat to hot temperature, but dont burn! Measure about 1/8 cup mix (might use slightly more) slowly and let each pancake be the same size. Turn heat down. When few bubbles are on top of pancake, turn over. Turn heat up again. Regulate your heat, just so they dont burn on one side--but pancakes need to be cooked at higher temp.

I always use a pre-packaged dry mix, like Krusteaz (but there are lots of other brands). You just add water, stir it up, and pour it onto a hot (hottest possible setting) griddle, or hot skillet. Wait until the bubbles form on the top and stay open near the edges, then flip, wait for about 1 minute and take them off the griddle.

the microwave ones in the freezer section are pretty good but if you want quick fancy ones then buy the blueberry or strawberry muffin mix (little package for under a buck) add milk and cook as pancakes, they are great!!

1/2 cup of flour
1/2 cup of milk
2 eggs
salt to taste
nutmeg to taste

pour into a greased 9-inch pie plate and bake for 12 minutes at 425F. Cut and serve while hot.

Here is the recipe I use all the time. They come out light and fluffy every time. Be sure and let the batter sit for about 5 minutes before you begin pouring the batter into your pan.

Buy the shake and pour bisquick mix and pour onto pan. Cook and eat. Very easy. Hope I could help!

You can buy the batter already mixed. Just pour in frying pan and cook!
