Do you have to bother with all the vanilla essence and such?
Because I feel like making a cake, and it's Sunday evening so theres no shops open to get the rest of the stuff :)

You can make a coffee cake (if you have some cinnamon, it would taste even better) with those ingredients ... you don't need 'vanilla' or baking powder with self-rising flour, but self-rising flour is for things like 'muffins' and some cookies and some 'quick breads' ... it's not FINE enough to use to bake a good 'cake' ... but you CAN 'mix up a quick cake' and have it taste the way YOU WANT from the ingredients you have listed ... but lemon juice is STRONG so you will have a 'lemon flavor' to the cake if you use it to 'activate' the baking powder that is mixed in to make the 'self rising' flour. I still think it would be GREAT with some cinnamon swirls and a cinnamon 'crumble' topping, but I use cinnamon as a pain reliever so I simply LOVE cinnamon. Better to 'eat a treat' when I hurt, than to take a pill.

Yes. It won't taste as good without vanilla, though. You could use any kind of extract or spice to give it a little flavor, tough. Lemon juice will provide the acid to help the cake rise if you're using baking soda, but if you want a lemon flavor, use the zest (grated lemon peel, only the outer part, not the white stuff), as well.

LEMON POUND CAKE

2 1/2 c. cake flour
1/2 c. self-rising flour
2 c. sugar
2 tsp. baking powder
1 tsp. salt
2 tsp. lemon extract
2 tsp. lemon juice
1 c. Crisco
1 c. milk
4 lg. eggs

Mix together (beat 5 minutes) pour into tube pan. Bake at 325 degrees for 1 1/2 hours.

LEMON GLAZE ICING (for Lemon Pound Cake) :
1 box (2 c.) powdered sugar
1 tsp. lemon extract
1 tbsp. lemon juice
Grated rind of one lemon
1/2 stick butter
1/4 c. milk

Melt butter - add milk, flavoring, lemon rind, powdered sugar - all ingredients - ice cake while warm.

POOR MAN'S POUND CAKE

1 c. butter or 1/2 c. butter and 1/2 c. shortening
2 c. sugar
1 1/2 c. plain flour
1 1/2 c. self-rising flour
4 eggs
1 tsp. vanilla
1 tsp. coconut flavoring or 1/2 tsp. lemon extract
1 c. sweet milk

FOR GLAZE:

1 c. confectioners' sugar
1 tsp. coconut flavoring or other of your choice
Just enough sweet milk to mix

Blend shortening, sugar and eggs until smooth. Sift flour together, blend into creamed mixture along with the milk. Add flavoring last. Mix well. Pour into a greased and floured tube pan and bake at 350 degrees for about an hour. Do not grease and flour sides.
GLAZE: Mix sugar, flavoring and milk after cake is done, and spoon over cake. Return to oven (turned off) 10 minutes. Let cake cool in pan. To turn out of pan, run knife around edge of cake, set on warm burner just long enough to warm bottom of pan. Will turn out easily.

its called a dump cake .if you could add some kind of a baking soda ,like what ou would keep in the fridge (odor elimanator) at least atsp. it should turnout fine 325 for about 20-25 minutes good luck

Might be a little bland, you can always cut it into thin slices, spead jam in between them, then put them back together for a Jam Cake.
