I have made this for my husband because he loves hamburger helper, but I don't allow processed foods into my home except on special occasions.
Sautee up 1 small diced onion and 1/4 pepper. I prefer cubano, but any will do. Then add approx. 1 lb. of ground meat (I use turkey, but don't tell him), with about 1 tbsp. each cumin, adobo, chili powder, and black pepper. To this I add 2 finely diced chipotle peppers in adobo with a little bit of the sauce and 1 can of diced tomatoes. I let this simmer down until it's a really thick mixture. Generally about 20 minutes.
Then I cook 3 tbsp. each flour and butter in a sauce pan for about 2 minutes. Then I add 1 can of evaporated milk and 1 large bag of cheddar cheese. Let this come together and add to the chili. Then add about 3/4 box of cooked macaroni noodles and let this simmer for about 5 minutes.
Just remember to S & P the veggies, meat, cheese and salt the pasta water. It's not my fave meal, buy my guy really likes it and the kids love it.
