"Logically absurd"? Not sure what you mean by logic. If, in fact god is all powerful then turning a staff into a snake and then back again would seem to fit quite well within the scope of his power.
I would even argue that 1+1=3 could be done by God as well, if He did it it would probably not be in the way you're presenting it because as we understand the numbers one and three and the nature of addition it would never make sense for that equation to work out in that way. However, since God has created all things and given them meaning He could have logically caused the meanings to line up in such a way as to give that equation logical form. The logic would however be much the same as it currently is with the meaning of the numbers being different.

The one who has created such a vast universe with so many galaxies with so many stars in each one of them and then is keeping this universe in perfect harmony without the slightest fault coming in it, obviously has power over all things. He is the one who makes the sun rise from the east and set it in the west and no one is there who may make that happen if he wills some things else for it. He only has created this universe where everything can be understood in terms of numbers, he is creator of the laws as well of course. So if by his will a stick can become a sanke, it is not a big deal because nothing is difficult for him. The conclusion: obvioulsy he can make 1+1=3 as well though our small insignificant brains might not understand how. By the way how much of the universe do you understand?

No, I can easily make 1 + 1 = 3...
1 pair + 1 single = 3 singles
And...my staff turns into a snake after I blow a load.

I don't believe in God, but I would say that if God existed, it would be more difficult to make 1+1=3 than to turn a staff into a snake.
The reason is because changing mathematical truths is a necessary impossibility (based only on applying logic to a set of axioms) but transsubstantiation is a contingent impossibility (based on the contingent nature of the laws of physics).
Of course, that relies on the assumption that logic is necessary and the laws of physics are contingent, but that's another story.

That's kind of an odd way of putting it. Why would God want to make 1+1 = 3? It would throw off the whole number system.

If something is logically absurd or not doesn't seem to matter, in my view.
Unconditional love isn't logical. Neither is grace or mercy.
If nature is influenced by God, why does it have to be logical?

actually I think the staff into a snake was a metaphor for moses getting a woody in front of pharoah.
bieng able to command erections at will and demand them to go away at will is a much greater feat than turning a wood shaft into a legless reptile.

By human standards, yes, both are "logically absurd," but God is obviously playing in a different league than we are.

Nope, they will 'appear logically absurd' to YOU because you do not have the ability to understand the Spirit of God.
1Cr 2:14 But the natural man receiveth not the things of the Spirit of God: for they are foolishness unto him: neither can he know [them], because they are spiritually discerned.
