I worked with a chef from Indonesia. He only cooked Fries or Chips occasionally and they were VERY popular.
He deep fried his fries once and let them cool. While he was frying them a second time he'd put a little olive oil, fresh finely chopped garlic, cayenne, cumin and smoked paprika in a large metal bowl. When they were crispy he toss them repeatedly in the bowl until they were all coated.

Homemade Crispy Seasoned French Fries

2 1/2 pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
1/2 cup water, or as needed
1 cup vegetable oil for frying

Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

I like to use seasoned salt, especially on homemade fries. You can get the Red Robin seasoning clone on topsecretrecipes.com (be careful-you have to pay for some of the recipes but this 1 should be free)

Honestly, why even add seasoning to them? Potatoes taste great, and if they are fried, the oil will give a nice taste. I used to have to dip fries in ketchup, but after being lazy one night after dumping fresh veg oil in the fryer and frying up some of them, I forgot to get some of that seasoned tomato paste. I ate them up like a freak. I never really knew how great potatoes taste without salt and added junk.

I use salt (2 spoons), pepper (2 spoons), Zatarans Fish fry seasoning (2 cups), and Cavenders Greek seasoning 4 spoons) - this is for about five pounds of fries. Mix well in paper bag, then add fries. ~ ~ ~ this is also great for chicken wings (and I have even sprinkled it on corn bread just before frying)! I have five children, and they all love this!

When I make seasoned french fries, I sprinkle them with seasoning salt.

There's a seasoning called Cajun Seasoning that is good on fries. It's available at the supermarket.

I only use seasoning salt and pepper but sometimes i make that with a combination of garlic salt and maybe even oregano once in a while. And sometimes i add parmasaen to it.
