I put chicken breasts in the crockpot and then pour a bottle of BBQ sauce in there, then shred the chicken with a fork. We have BBQ chicken sandwiches with some vegetables and they are amazing.

My wife and I are big chicken eaters, so we do the same with taco meat. Fajitas are good in the slow cooker. Just cut up some peppers and put some seasoning in, beef, and a little water and it always turns out.

I love slow cookers!
My fav meal is called lobscous.
My nana taught it me
Put in the slow cooker choped up carrot and potatos and finly chopped oinion in boiling water, throw it all in a leave it for quite a few hours, (I tend to leave mine all afternoon) then about half an hour befor tes time throw in choped up chunks of corned beef, if you leave it longer than half hour - 45 mins the beef will disintigrate. Serve with crusty bread, or add some dumplings to it about and hour before serving!

Pulled Pork Sandwiches w/ ColeSlaw. You cook the pork roast in the slowcooker. McCormack puts out a seasoning mix for the pork. You just gotta throw the meat in the cooker with the seasonings & liquid & let it cook! I get nice kaiser rolls for it & I make a homemade slaw to out right on with the sandwiches! MMM!! Delish!

Here's a good one I got from one of my contacts! I tried it and it is very delicious!

6 boneless skinless chicken breasts, 2 cans Campbells Cheddar Cheese Soup, 2 cans Campbells Fiesta Cheddar Soup, 1 can MexiCorn, 1 can black olives, 2 cups white rice

Rinse chicken breasts and trim any excess fat. Lay chicken on bottom of crock pot. Mix soups together and pour over chicken. Cook for 6-8 hours on low.

Make rice according to package directions. Drain olives and corn. Shred chicken in the crock pot with 2 forks, then add corn, olives and cooked rice.

Roasted Tarragon Chicken and Gravy
6 servings

1 (4 lb) whole chicken
1 (14 ounce) can low sodium chicken broth
2 teaspoons dried tarragon leaves, crushed
2 teaspoons garlic salt

Leave chicken whole.
Wash chicken, drain and pat dry.
Mix terragon and garlic together.
Sprinkle mixed seasonings inside cavity of chicken and over the outside.
Place chicken in crock pot , breast side up.
Pour broth into crockpot.
Sprinkle rest of seasoning mix over the chicken.
Cover and cook on low for 8 hours.

To make gravey:.
remove chicken from crock and keep warm.
Add thickening to thicken gravy to desired thickness.

Spanish Pork Stew with Potatoes

INGREDIENTS:
1 pound lean pork shoulder (also known as pork butt)
4 to 5 medium potatoes
1 pound tomatoes, diced, canned or fresh
1 green bell pepper, or use half green and half red
2 tablespoons vinegar
2 tablespoons vegetable oil
3 garlic cloves, crushed
1 cup chicken broth
1 bay leaves
1 medium onions, chopped

PREPARATION:
Cut pork into large chunks. Peel potatoes and cut into 1-inch pieces. Seed, core, and thinly slice bell pepper.
Heat oil in a skillet; brown pork, stirring to brown all sides. Layer all ingredients in crockpot in order given; cover and cook on LOW until meat is tender, about 9 to 10 hours.

Chicken Stew

INGREDIENTS:
1 pound boneless chicken breasts and/or thighs, skin removed, cut into bite sized pieces
2 cups water
1 cup frozen small whole onions
1 cup (1/2-inch) sliced celery
1 cup thinly sliced carrots
1 teaspoon paprika
1/2 teaspoon salt
1 teaspoon poultry seasoning
1/2 teaspoon pepper
1 can (14-1/4 oz.)chicken broth
2 cups halved mushrooms
1 can (6-oz.) tomato paste
1/4 cup water
3 tablespoons cornstarch
2 cups frozen green peas

PREPARATION:
Combine first 12 ingredients in a large crockpot. Cover and cook on HIGH for 3 to 4 hours or until vegetables are tender. Combine water and cornstarch in a small bowl, stirring with a wire whisk until blended.

Add cornstarch mixture and frozen peas to slow cooker; stir well. Cover and cook on HIGH setting for 30 minutes longer.
Serves 6 to 8.

I love making roasts in the crock pot. In fact I have one in today lol..
I just get a 2 pound roast then throw in carrots, celery, potatoes, onions, mushrooms, etc. I then add about a 1/2 cup of water and a packet of onion soup mix. Comes out great everytime!!! Just let it cook low all day...

Pot roast with potatoes, carrots, bell pepper, onions, mushrooms
Season the roast, sear it in a skillet, then add to crockpot. top it with the veggies and add some red wine, worcestershire, salt, pepper, garlic, and a pack of lipton onion soup mix.
cook on high approx 8 hours.

I cook alot in my crock pot. My fave is red beans with Chapple Hill sausage (beef). But today while vacation at the beach, I'm making chili. Also this week I'll make shrimp gumbo, and a creamy chicken with herbed dressing.
