We went apple picking this weekend.... and while we all like apples to snack on, there's a limit to how many we can eat before they start going bad on us. I made an apple pie last night and we'll make shrunken heads for Halloween this weekend.

Does anyone have any recipes that use apples other than apple pie?

Apple Stuffed Chicken Breasts

6 boneless, skinless chicken breast halves, butterflied
STUFFING
1 box Stove Top Stuffing Mix & ingredients to make
1 large apple, peeled & grated
1/3 c. toasted chopped walnuts
1/4 c. raisins
GLAZE
2/3 c. apple jelly, melted with 1 tsp ground cinnamon & 1 tbs worcestershire sauce

Make stuffing mix according to package directions, stir in apple, nuts & raisins.
Preheat oven to 375 degrees. Line a rimmed cookie sheet with parchment or foil sprayed with cooking spray. Make 6 mounds of stuffing on sheet, bake 5 minutes. Top with chicken. Season to taste with salt & pepper. Bake 10 minutes or until chicken is 155 degrees on an instant read thermometer. Pour glaze over chicken, cook an additional 5 minutes or until glaze is set & chicken reaches 165 degrees on instant read thermometer.

Apple Dumplings

2 c flour
4 t baking powder
1 t salt
4 T shortening
1 c milk
4 or 5 apples pared, cored and cut in half
sugar
1 t cinnamon

Sift the dry ingredients, cut in shortening, add milk and mix to a smooth dough. Turn onto a floured board and divide into 8 or 10 portions; roll out each portion large enough to cover 1/2 apple. Place apple on each piece of dough, fill core hollow with sugar and cinnamon. Wet edges of dough and press together over apple. Place on greased baking sheet and bake in a 350 degree oven until the apples are tender-about 1/2 hour. Serve with a boiled brown-sugar sauce or put the dumplings into a baking dish, pour the uncooked ingredients for Brown Sugar Sauce into the pan around them and bake till the dumplings are done and the sauce is thick.

Brown Sugar Sauce
2 c of water, 2 c brown sugar, 3 T butter; combine and cook together for 5 minutes; or simply pour uncooked sauce around dumplings and bake.

One thing I like to do with apples is to peel cut and slice them. For each 4 apples use 3 tbsp. of butter and a 1/4 c. of brown sugar. Seaon slightly with cinnamon and if you like nutmeg and my personal favorite a little bit of lemon zest. You well end up with slightly tender apples in a syrup. The great thing about this is that you can freeze it. You can top pancakes, icecream, mix in crepes, etc. Anything. Just make sure you defrost at room temp.

You can also finely dice an apple and add it to a pan of stuffing. It's really good with pork chops. Another nice side dish is waldorf salad. This is something that I could eat all year long. The great thing about making apple sauce is that first you can jar it, I would never do this too much work, But also you can use it in cakes, muffins, pancakes, waffles, etc.

we went apple picking over the week-end, too. :D We'll be making all pies with ours , but i saw some yummy looking apple crisp at the farm store we visited.

APPLE CRISP.
3 pounds tart apples
2 tablespoons lemon juice
1/2 cup light brown sugar, packed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup rolled oats
4 tablespoons cold butter (1/2 stick)
1/2 cup chopped walnuts or pecans

PREPARATION:
Peel, core and chop the apples; toss in a bowl with lemon juice. In a separate bowl, combine the brown sugar, cinnamon, and nutmeg; add to the apples and toss to combine.
In another bowl combine flour, sugar and oats.

Cut butter into 8 small pieces, and cut butter into flour with a pastry blender or two forks until mixture is crumbly. Stir in the chopped nuts.
Butter a 9-inch square baking dish. Spread apple mixture in bottom of baking dish then sprinkle with flour mixture. Bake at 375° for 30 to 45 minutes, or until apples are tender and topping is lightly browned.

Serve warm or at room temperature, with vanilla ice cream or a little heavy cream, if desired.

Easy Microwave Applesauce

Ingredients:
Basic Applesauce
8 apples (see Note), peeled, cored, and cut into chunks
1/3 cup water
1/4 cup sugar

Flavorings
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Method:
1) In 2-quart microwave-safe dish, combine apples and water. Cover with lid or vented plastic wrap; microwave on high (100 percent) 12 to 14 minutes or until apples are tender. (If microwave does not have carousel, rotate dish every 4 minutes.) Stir sugar and choice of flavoring.

2) Microwave on high 3 minutes or until sugar dissolves. Stir and set aside to cool before serving. If finer texture is desired, mash or puree apple mixture and put through strainer.

Apple Crumble with Vanilla Ice Cream
1 1/3 cups of flour
1/4 cup brown sugar
cinnamon (add as much to your own taste)
1/8 cup white sugar
apples
1/2 cup of butter

mix flour, brown sugar and cinnamon in a medium-sized bowl.
break the butter into pieces and then work it in to the above mixture with your fingers. mix until its almost breadcrumb texture.
peel, de-core and chop apples into small cubes and place then in another bowl with the white sugar
heat the oven to 350
pour apples into a baking dish
pour the crumble mixture on top of the apples
if you like you can sprinkle some more cinnamon on top
you can also add little skor bits on top for a bit of chewiness
bake in the oven for 35mins
check that apples are soft
and voila!!
serve with ice cream!!

INGREDIENTS
12 ounces of apple concentrate
about 1/2 or 3/4 cup apple cider
4 pounds Macintosh apples - peeled, cored and chopped
3/4 cup dark brown sugar
1 cup apple brandy
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves

DIRECTIONS
In a large saucepan, bring apple juice concentrate, apple cider, and Macintosh apples to a boil. Reduce heat to low. Stirring occasionally, simmer uncovered about 1 hour, until apples are easily mashed.
Mix dark brown sugar, apple brandy, cinnamon, ginger, and cloves into the apple mixture. Bring to a boil, reduce heat, and simmer uncovered 2 hours, stirring occasionally, until thickened. Transfer to sealed sterile containers, and cool at least 1 hour before serving.

I put apples in stuffing sometimes
I also cook a chicken breast put on a slice of apple, cheddar cheese and walnuts and then put it in the oven long enough to melt the cheese
You can make and can apple sauce
I also make apple salsa- it has apples, grapes, cinnamon and sugar in it and then you put cinnamon and sugar on flour tortillas and cut them then bake them and use those as the chips.
If you get desperate you can make candy apples, caramel apples and peanut butter apples
