All three, in my mind, are mythologies, neither of them are factual or proven, so what is the difference? Is it just because people still follow Christianity and Islam, but not characters like Odin and Thor?

Religion is a subset of mythology.

Odin and Thor were part of religion once upon a time.

It's to do with currency and trends.

Mythology is religion that has fallen out of use.
