I always love ro know the reasons of evertyhing...and I am sure there is an answer to everything too..this is not a cancerous question anyway...hehehhe

They are used in different contexts. If, for example, you are simply saying the plural of fish, (more than one) than it is fish. But if you are talking about different types/categories/species/whatever of fish, then you would use fishes.

Monies is often used as "monies due" or "monies owed". In this context it refers to multiple sums of money owed by different people or for different transactions. As such it is technical word that crops up in finance/ accounting situations.

Vegetable is not in the same category as the other words you mentioned. The plural of vegetable is formed by adding an s, as is the norm for most other English words.

But you're correct about deer, sheep, etc. No real reason, just how the language evolved, I guess.

Fishes is a plural form of fish. Fish by itself can also be the plural. Vegetables is the proper plural without the 's' you just have the singular. Monies is quite an archaic word (in the UK anyway) andmy teacher always used to use it when she was collecting money for school trips etc 'Can I take your monies please'. Hope that helps!

It is incorrect because that is the way English grammar developed; sheep is both singular and plural. Much the same as "fish" is both a verb and a noun.

It's not ok to say "fishes"...it's just "fish" for one or many fish.
