STUFFING CRUST QUICHE:
(This is half-way between an omelette & sandwich)
Saute 3/4 cup chopped onion, & 1/2 cup chopped celery,
in oil or butter until soft; add 2cups chopped mushrooms.
Saute until liquid evaporates & onion is soft, remove.
Add 1/3 cup hot water, 2 tsp bouillon powder or cube.
Parsley flakes & crushed dried sage, pepper optional.
Add 3 slices day-old whole-wheat bread in 1/2" pieces.
Grease 10" glass pie plate, press bread mix into bottom.
Spread cup of cooked mixed vegs (corn, peas, carrots, etc.)
& 2 cups grated Monterey Jack cheese over bread mix.
Put in food processor or blender: 3 large eggs,
1 cup cottage cheese, salt, parsley, paprika, cayenne, etc.
Process until pureed, pour over cheese.
Bake at 325F on centre rack, about 50 minutes,
test that knife in centre comes out clean.
Let stand 10 minutes before cutting.

I have a wonderful recipe for baked corn. We don't have a family gathering without it !!! 2 Cans of cream style corn 1 Can whole kernel corn 1 6 1/2 oz.,or 8 oz. Corn muffin mix 4 eggs beaten 1 tsp. salt 1/4 cup sugar 1/2 cup melted or soft butter or marg. 1 1/2 cup shredded cheddar,or monterey jack cheese Mix together all ingredients,pour into a 9x13 greased cake pan. Bake for 1 hour, @ 350 degrees, check corn by sticking a knife in center,if comes out clean,it is done,otherwise bake another 10 mins. Cut into squares and enjoy the best baked corn you will ever eat !! My mom gave this to friends that have a restaurant,and this is always on the Sunday special,never any left over. We got this recipe from an aunt in Missouri, and we sure are enjoying it in North Dakota !!!

PASTA FASOL
1 grated onion and few tsp. olive oil (saute)
2 cans of tomatoes OR 1 qt. jar put in blender or processor
2 cans of bean soup (with water added)
Minced garlic
Salt and pepper to taste
Wide dumpling noodles (12 oz.)
Combine onion, tomatoes, bean soup and seasonings, simmer on low heat. Boil noodles, rinse and add. Simmer another 15 to 20 minutes. This a quick version of an old Italian recipe handed down from my father's family. It has become a favorite for those cold winter evenings. Serve with a baked loaf of Italian bread. This meal will make you feel warm all over.

Pasta Alfredo.
1/2 cup margarine or butter
1/4 cup flour
1/2 to 1 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder
2 cups milk
In medium sauce pan melt margarine. Blend in flour, salt, pepper and garlic powder. Cook until smoot and bubbly. Gradually add milk. Once the mixture is starting to get hot, stir in parmesan. Heat to boil, stirring constantly, until mixture thickens.
Pour this over your pasta, done. Take 30-40 minutes.
Biscuits are pretty quick too, and make a nice change from toast with your eggs.

There is always french toast,but why not make custard or bread pudding for breakfast?
Its super easy. For custard, mix your 4-6 eggs, 3/4 cup of sugar, a teaspoon of vanilla, just a fourth cup of flour, and 3 cups of whole milk or cream. If you want, add a dash of nutmeg, or cinnimon. Place this in a glass bowl and microwave it until its set. Or cook it in a bowl in an oblong pan filled with water in the oven at 350 degrees for about 35-40 minutes?
For the bread pudding, do the above, don't bake, and pour over day old bread, or croissants, add whatever add ins you like, fruit, nuts, raisins, and bake as you would the custard in the microwave. Yummy, and delish.

Bacon in the microwave until is almost done. Then break up and add to scrambled eggs, add cheese and salt and pepper. Throw some grated cheese on the top or some strips of american cheese. Bake in an oven proof, greesed dish on 350 until the whole pie is firm and top is crispy. Serve like pie with toast.
p.s. You can use any pre-cooked meat and you can also add veggies.

Stir fry is easy and quick.
1 - cup of rice (w/2 cups water, 1 tsp salt, 1 tbls butter or margarine) bring to boil, simmer for 15 minutes
stir fry some bok choy, onions, celery, bell pepers, any veg's you like with 2 tbs butter/2 tbs oil, & some garlic for taste.
meat - precook chicken breats or beef steaks, cut to bite size and add to vege's stir fry.
Add 2 tsp corn starch or floor to 2 cups cold water, blend well, add to stir fry & meat for gravy souce.
Done in 30 minutes or less.

take a piece of bread and gently rip a round hole in the center. Have some real unsalted or salted butter already melting in the skillet (nonstick). put the bread in the skillet and crack an egg over it so the yolk is in the hole. Do not break the yolk. when the egg is cooked almost all the way. flip with out breaking the yolk. when it is finished put it on a plate and top with what sounds good to you. You can add salt and pepper, Salsa. chives and sour cream, chili, or shredded cheese to name a few things.

Pasta (penne, bow-tie, rotini, etc.) cooked.
Italian sausage cooked and cut into bite-sized pieces (I like to boil it with the pasta, then slice and brown in a skillet)
chopped vegetables such as onion, zucchini, peppers, asparagus, basically any veggies you have on hand, cooked with butter or olive oil until soft and a bit brown.
Salt, pepper, optional garlic clove (minced, mmmm) and serve!

Maybe listening to my advice isn't such a good idea but hey, give it a try ;). I usually just get chicken broth, canned tomatoes and dump them in a pot, boil the solution and add noodles that have been broken into 2 inch segments and voila, good, hearty soup!
