I picked the apricots over the summer and froze them. I am thawing them tonight and need a good way to get the skins off them so I can make lots of Christmas jam. Any suggestions? Thanks in advance and God bless!!!

I've made apricot jam and jelly for years and never heard of peeling them! Just cook them, and they will mush down and you will never know they ever had skins on. You might want to put them in the blender or if you have an immersion blender, that would be wonderful, although it still isn't needed. OR...you could just make jelly which requires that you cook them and then strain them throught a cheescloth and strainer and then follow the directions from there.

You could blanche them, as you would peaches, and remove the skins. However, I wouldn't, if it were me.

I would just make sure that the apricots are are either sliced or diced well. The skin adds consistency. Just my opinion.

i'd leave the skins on. it's alot of unnecessary work. the end product will be no superiour
