It could mean that the cat isn't friendly, is scared or it may be injured or in pain. If it is your cat and it is hissing and has never done this before, it may have some sort of medical problem and need to be taken to a vet. Sometimes if a cat is outside, it is scared, sometimes just talking to it will calm it down. Every animal has a defense mechanism and hissing is a cats.

you have startled the cat
you have angered him/her
she is a nursing mum warning you to keep away from kittens
you have scared him/her
Go easy near stray cats or cats you don't know, a cat bite can be very painful (and once they get anchored they don't let go unless you have had to beat them to make them let go.) there claws are sharp and can do lots of damage. When getting to know cats (even friendly ones) always talk very gently to them and watch you don't put face or hand too close let the animal come to you, it might take longer but is safer.
If a cat purrs it is usually happy but the odd one can use it as a means to lull you and then pounce so until you know the animal properly be alert and treat it with real respect.OK?

It could be fear or the cat being territorial.
I would back off if a cat hisses. It's not a good sign. Usually cats will calm down if you give them time and space.

A hiss is a warning. The cat was intimidated by your presence, you may have just startled it, if it was relaxed and you came up too quickly. Doesn't necessarily mean that the cat doesn't like you, just that you made it feel somewhat intimidated.

Probably that they hate you.

Although some cats hiss when scared or ticked off, or at other animals. If your cat hisses at you, and you're not torturing him, he hates you.

It means "how would you like a facial massage with my claws". LOL
A hissing cat is like a dog growling.
