I think it's called Manoodle it has beef stomach in it also

Beef stomach is tripe

Menudo Tripe Soup

Ingredients

(10 servings)

2 1/2 lb Tripe
1/2 Calf's foot
1/3 c Vinegar
Cold water
2 Cloves garlic
1/2 sm Onion
3 qt Water (approx.)
Salt
1 1/2 c Hominy
Red Chile Puree (see below) OR 1 cup canned red chile
Sauce
Finely chopped green onions
Chopped cilantro leaves
Lemon wedges
Corn tortillas, heated

Red Chile Puree:
8 California chiles (1/4 lb)
2/3 c Water


Instructions

It's traditional to recover from a night on the town with a bracing bowl of menudo.
Scrape off any fat from tripe. Cut tripe into 1-inch squares. Place tripe and calf's foot in a large bowl. Add vinegar and cold water to cover generously. Let stand 3 hours. Drain. Rinse tripe and calf's foot thoroughly. Place in a large pot. Add garlic and onion. Pour in water to cover ingredients plus 1 to 1 1/2 inches, about 3 quarts. Add salt to taste. Bring to a boil; reduce heat. Cover and simmer about 6 hours or until tripe is tender. After 1 hour, skim foam from surface of soup. Skim again as needed. Add more water if liquid evaporates. Prepare Red Chile Puree. Add hominy and Red Chile Puree during last hour of cooking. Ladle into large bowls. Serve chopped green onions, cilantro, lemon wedges and hot corn tortillas separately.
Makes 10 to 15 servings.
Red Chile Puree: Remove stems from chiles. Break chiles open and rinse out seeds. Place in a saucepan with water to cover. Bring to a boil. Continue to boil until chiles are softened, about 5 minutes. Drain; discard water. Place chiles in blender; puree. Add enough water to make puree the consistency of tomato sauce. Press pureed chiles through a sieve to remove bits of peel. Makes about 1 cup.
Variation: Substitute 1 1/2 cups nixtamal (cooked dried corn) for canned hominy. Combine with soaked tripe and calf's foot, garlic, onion and water. Cook as directed above.

1 calf's foot (about 1 to 1 1/2 pounds)
2 pounds honeycomb tripe
1 large onion
3 cloves garlic, peeled
6 peppercorns
2 teaspoons salt, or to taste
4 quarts of water
A comal or griddle
3 large chiles anchos
A spice grinder
A large chile poblano, peeled or 2 canned, peeled green chiles
The calf's foot
1/2 cup canned hominy (1 pound) drained
Salt as necessary
1 scant teaspoon oregano

Have the butcher cut the calf's foot into four pieces. Cut the tripe into small squares. Put them into the pan with the rest of the ingredients. Cover with water and bring to a boil. Lower the flame and simmer uncovered for about 2 hours, or until the tripe and foot are just tender but not too soft. Meanwhile, toast the chilies well. Slit them open and remove the seeds and veins from the chile poblano, cut it into strips, and add to the meat while it is cooking. Remove the pieces of calf's foot from the pen, and when they are cool enough to handle, strip off the fleshy parts. Chop them roughly and return them to the pan.

Add hominy and continue cooking the menudo slowly, still uncovered, for another 2 hours.

Add salt as necessary. Sprinkle with oregano and serve

This amount is sufficient for 7 or 8 people. It should be served in large, deep bowls with hot tortillas and small dishes of chopped chile serranos, finely chopped onion and wedges of lime for each person to help himself, along with Salsa de Tomate Verde Cruda to be eaten with tortillas

yeah...it's menudo. Yeah...it's made with tripe...but in my opinion, the best one to get is called honeycomb. Just has a better flavor.
The recipe above seems way too complicated. I make it from scratch but don't really know the amounts because i just throw stuff together. I don't even know why we have measuring cups....lol.
i might need to get back to this one with some ingredients and stuff for ya....

1 pack of flat crispy corn totillas
2 tomatoes diced (small peices)
1 green pepper diced (small peices)
1 red onion died as well
ground meat
sour cream
shredded cheddar cheese

marinate the onions in vinegar and sugar on the side for 15minutes strain when done then add a bit of oil

take yr tomatoes and pepper mix them together add a small pack of the season salad (green and yellow box) onion powder garlic powder. 2 tespoons of vinegar and 3 tespoons of oil. sprinkle with parsley flakes

Take yr ground meat and boil till brown...strain then place in saucepan...then add all powdered seasonings dont forget to add a little color into it (sazon with color) im puertorican so i cook spanish style..lol anyway so stir that toghether and heat for about 10 minutes. i usually take my crispy tortilla smear sour cream all over it...then add a spoon full of meat or as much as u like then i add my shredded cheese then add mixed tomatoes and peppers and the onions to finish off some of us put extra sour cream ontop but its however u like...hope u like and enjoy..and as for other home meals in less than 30 minutes get back to me....enjoy
