Add the veg to the pan and cook stirring occasionally for about 5 mins or until lightly browned. Then add the sliced potato and cook for a further 3 mins.
4. Sprinkle in the peas. Beat the eggs with the dried herbs, Season well with salt and pepper. Pour into the pan, tipping the pan so the mixture covers all the veg.
5. Cook gently, without stirring until the egg sets. If the surface looks a little wet, flash the pan briefly under a hot grill.

This is a good recipe for using up odd left over veg, eg: courgette, mushrooms, or cooked carrot or celeriac etc:, the combinations are endless.

Coddled Eggs- is the best egg recipe i've ever had. Basic instructions: In a pot cook up a stew of tomatoes, red + green peppers, sliced chorizo and onions with a bit of vinegar. When that's cooked and juicy, place at the bottom of several rammekins (for however many people) then crack 2 eggs on top of this, drizzle with cream and parmesan and place in a hot oven until the egg is set. Serve with lots of great bread : )
