You or him? He invited U on a trip, but U couldn't (go, I;m guessing), U kept in touch over time eventhough you moved far apart from each other. U became more than friends (my emphasis), and he invited U again & yet again.
I think you are overreacting. Do U have a good relationship now? Is the realtionship better now that U became more than friends? You communicate with each other, which is a big plus theses days. But it seems U keep putting him off. Ask yourself: Do U want to date him/see him again, or not?

doesn't sound like he has a mental problem...just sounds like he wants to be closer to you....the unstable thing is trying to have a relationship that is long distance. they hardly ever work out and usually someone gets hurts.
