noodles and meat sauce

brown 1lb of ground beef. drain. in empty pan, warm 1 can beef broth and 1 can mushroom soup until thoroughly combined. add in beef and stir. stir in fresh or canned sliced mushrooms. add in any seasonings needed..salt pepper seasoned salt, etc. let simmer and sauce thicken.

while doing all that...cook 1 package egg noodles according to directions. when done, spoon sauce over noodles and enjoy.

this is just a ballpark recipe...add in as much meat and mushrooms as you like...you wont mess it up i promise you.

serve with veggies/salad

this is my favorite recipe..I make it at least once a month for my family..it's super easy and tasty

SUPER EASY ENCHILADAS
1 lb. ground beef

1/4 cup chopped onion (optional) I prefer not to use onions but some members in my family love it with onions.

2- 10. oz can of enchilada sauce ( I prefer the mild red sauce)

3-4 cups of your choice of cheese ( I use the mexican blend)

corn or flour tortillas ( I use flour)

preheat oven to 350 degrees

Brown beef and onion (if you use onion) until beef is thoroughly cooked.

Drain and stir in 3/4 cup enchilada sauce and 1-3/4 cup cheese.

In a 9X13 baking dish, pour a small amount of enchilada sauce into the bottom of the dish, coating the bottom.

Spoon ground beef mixture into tortillas.

Roll up and put seam side down in a 9X13 baking dish.

Pour remaining enchilada sauce over top and sprinkle with remaining cheese.

bake at 350 for 20-25 minutes or until cheese is nice and bubbly. Enjoy

To make an easy side dish try cheesy mexicorn

CHEESY MEXICORN:
1 (3 ounce) package cream cheese
1/4 cup milk
1 tablespoon butter or margarine
1/4 teaspoon salt
1/8 teaspoon pepper
2 (12 ounce) cans whole kernel corn, drained

Cut cream cheese into small cubes and combine with milk, butter, salt and pepper in a saucepan.
Cook over low heat, stirring constantly until cheese melts.
Add corn and heat thoroughly.
