The system runs in 720p for everything else, music, tv etc. However it seems to switch down to 480p only on DVD. Then switch back when finished playing. Something to do with copyright protection perhapes as I'm using analog component output ?

You can force 720p or 1080p only if you output via VGA, HDMI or DVI to your monitor or TV.

Not all video cards support 1080p, but 720p via VGA should not be an issue.

You are correct DVD copy protection does not allow higher res. than 480p over component. Switch to VGA.

I'm confused. If the signal from your PC is 480, yuour TV will upscale it to 720P. Isn't it doing that? Are you saying that your TV doesn't do a good job of upscaling and you want the PC to do it?
