Classic twice baked potatoes . Bake your baking type potato until tender. Cut the top off & scoop the potato in to a bowl. Mix in sour cream and / or heavy cream, melted butter, salt and pepper to taste, finely cut green onions and some grated cheese whatever your favorite cheese is most people use cheddar. Pepper jack would be good too or white cheddar with horseradish if you are serving it with beef. Mix everything together . Spoon the potatoe mixture back in to the potato shells . Bake for 20 minutes or until nicely browned at 350 degrees. You could also add some cooked broccoli or bacon to this mixture. Parsley for color and taste. Cooked sausage. Lightly cooked red or green bell peppers.

Mushroom Stuffed Baked Potatoes

4 large baking potatoes
3 T. butter
1/2 t. onion powder
Salt
Pepper to taste
Milk
1 1/2 cups chopped mushrooms
1/3 cup finely chopped nuts
1/4 cup shredded sharp cheddar cheese

Wrap potatoes in foil. Bake at 425 for 55 minutes or until soft. Slice off top of each and carefully scoop out potato. Reserve skins. Mash potato with 2 T. of the butter. Add onion powder, salt, pepper and enough milk to moisten. Beat until fluffy. Melt remaining 1 T. butter in small skillet. Add mushrooms. Saute about 5 minutes. Stir mushrooms and nuts into mashed potatoes. Heap mixture in potato shells. Arrange on a baking sheet and sprinkle with cheese. Bake at 400 for 15 minutes or until golden brown.

When we're hungry for a hearty meal, I do Loaded Sweet Potatoes. The
potato is the meal, but I sautee green and red pepper, onions, and add
pineapple chunks, dried cranberries or cherries and sautee for a few
more minutes, then add chopped ham and a few tablespoons of real bacon
bits, or crumbled cooked turkey bacon, then sprinkle with splenda brown
sugar and let steam for about 2 minutes. Then, split the baked sweet
potato with the topping and enjoy. I always serve it with a side of
cornbread and coleslaw. A good meal.

You can also hollow them out a bit and fill them with ground meat (beef, pork, veal or a mixture of that) that you have seasoned and prepared. Then stick them in the oven and bake them.

Chili with a little cheese on top! Or finely chopped brocolli with cheese on top of it and then, if you are really hungry try chopped ham, brocolli and then drizzle cheese! Yum (but remember your eyes will be bigger than your stomach when you start adding all this stuff!!)

I like using leftover taco meat. Top with cheese, bake, and then top with green onions, cilantro, and some black olives. I call them Mexican boats.

try vinegar, put a little soy sauce, add some pepper, put a little olive oil and put pineapple tidbits.... hhhmmm... what does it tastes like? just try it.. at least once in your life time you've tried something one of a kind.. hehehe

cheese is extremeely delicious as well as a variety of herbs and spices you can use and when in doubt try bacon also!
